Hi Gang, Just thought I would post my dinner recipe. It was so simple and very very tasty. I took some boneless skinless chicken breasts and browned them in a skillet with a bit of olive oil and crushed garlic. Then I poured a jar of Newman's Own Mild Salsa right into the skillet. I put a cover on it and simmered for about another 20 minutes ****il the chicken is cooked). It was very moist and very tasty. This may not be new for alot of you but I do know some are looking for easy different recipes. Hope this helps!! Linda

Hey Linda, I do the same thing with the Salsa - and it is very tasty, but I put my chicken breasts in a crock pot, throw the salsa over them and cook on low all day -- very moist, tender and juicy. Mmm, can't wait to be able to eat again! Regards, Kathy

Hi Kathy, Yes I do that kind of thing also with the crockpot but that means planning ahead enough to have the chicken defrosted in time to put it in. You will be eating before you know it!! Let me know how you make out at Dr. Bell's! Wish I could meet up with you when you are in town but I am back to work on Monday so it probably won't be possible. Talk to you soon........

Hey Linda, No planning needed at all. I buy the chicken breasts that are individually frozen from Sams Club, or you can freeze each one separately yourself. Then, I just pull out the number I need, throw them frozen into the crock pot, add the salsa and go. It's one of my -- oops, I don't know what to do for dinner, recipies -- quick and easy in the morning. Enjoy, Kathy

Linda, Thanks for this idea... I'm going to try it soon. It sounds delicious. I sometimes have problems with eating chicken if its not moist enough. Here's one of my favorite recipes for chicken. Its easy and so very delicious. Roast Sticky Chicken 4 teaspoons salt 2 teaspoons paprika 1 teaspoon cayenne pepper 1 teaspoon onion powder 1 teaspoon thyme 1 teaspoon white pepper 1/2 teaspoon garlic powder 1/2 teaspoon black pepper 1 large roasting chicken 1 Cup chopped onion In a small bowl, thoroughly combine all the spices. Remove skin and giblets from the chicken; clean the cavity well and pat dry with paper towels. Rub the spice mixture into the chicken, both inside and out, making sure it is evenly distributed and rubbed deep down into the meat. Place in a re-sealable plastic bag; seal and refrigerate overnight. The next morning, when ready to cook chicken, put it in a crock pot with the chopped onions (I put half of the onions inside the chicken and half over the chicken) and do NOT add any liquid. As the cooking process goes on, it will produce its own juices. Cook on low, 8 to 10 hours, and it will be falling off the bone tender. I hope you give it a try and enjoy it as much as I have.
