Hey Jenny!
I am a SOUP FIEND! the past month or so I have been making alot of soup!
I never really follow a recipe, so its always hard to duplicate......
Live near Norwalk?? lol, I love to share my soup too!
Anyway, I almost always add beans, Quinoa (HUGE IN PROTIEN) barley, lentils all or some! I start with a veggie and spice base (onions, garlic, celery in oilive oil, with spices such as basil, rosemary, and italian seasionings)
after they are softened I add meats (ground trurkey, small beef cubes, chicken or anything else I have ...ummm frsh ham and veggie is good)
Afte that I add some stock, chicken usually and water....
maybe a can of tomotoes.... and the "beans or whatever"
and let cook down until flavors blend. I almost never eat the same day....
make up your own, and get creative!
Have fun and enjoy!
Sweet Mammy
Soups are winter's best comfort foods...but I know that my surgeon doesn't really like us to do too many of them cause they don't hold in our pouches long enough. They run right through and then we're hungry too soon. Makes sense.
If you do do soup, make sure it thick and hearty with good chunky pieces of protein that you can hold on to. Remember to chew them up enough!
Nothing like a hearty pot of stew...yummmmm But hold that bread and butter, noodles or dumplings that we've always done with it!
