Hello Everybidy Since some of you know I dont eat much carbs or no pasta for me.... My friend from New York gave me great recipes and I will try to make that recipes Here are recipes my friend shared with me EGGPLANT AND ZUCCHINI NO-NOODLE LASAGNA 1 (15-ounce) container ricotta cheese 1/2 cup grated Romano cheese 1 teaspoon dried basil 1 teaspoon dried oregano 1 tablespoon chopped fre****alian parsley 1/2 teaspoon ground black pepper CRISCO No-Stick Cooking Spray 1 pound zucchini, sliced lengthwise 1/4- inch thick 1 pound eggplant, peeled and sliced 1/4- inch thick 26 ounces tomato pasta sauce (your choice) 2 cups shredded mozzarella cheese In a large bowl, combine the ricotta cheese, Romano cheese, basil, oregano, parsley, and pepper. Stir to mix well. Heat the oven to 375 degrees F. Lightly spray a 13 x 9- inch baking dish with Crisco No-Stick Cooking Spray. Layer in order half of the zucchini, ricotta cheese mixture, eggplant, pasta sauce, and mozzarella cheese. Repeat in the same order, except for the 1 cup mozzarella cheese. Bake for about 40 minutes. Remove from the oven and top evenly with the remaining 1 cup mozzarella cheese. Bake for an additional 5 to 8 minutes, until the cheese is melted and lightly browned. Remove from the oven and let rest at least 15 minutes before serving. Makes 4 to 6 servings Pastaless Sausage Pasta Bake Ingredients 2/3 large can canned tomatoes 1/4 medium onion(s) 1 clove garlic 1/2 medium sweet potatoes 2 portion butternut squash 2 portion Turkey and Chicken Thick Sausage 1/3 can Healthy Balance Baked Beans in Tomato Sauce fry light the onion and garlic - then add the sausages chopped into slices. Once brown add the chopped tomatos. Meanwhile boil the diced BNS and sweet potato then add to the sausages with the baked beans. Easily popped into containers and microwaved at work. Peas / sweetcorn etc would also be nice added. 2pts per extra sausage added... This is really filling. Have fun cooking healthly foods in your kitchen and stay warm!!!! Those recipes sound great, I will want to try them too. Have you ever made egg crepes? They also can be used in place of pasta with a tomato sauce or cheese sauce and then you get extra protien too. Sher
