got back to work after jogging in the pretty snow for 2 miles. Love this moment! will get more exercise tonight at home

Hi T, O K , Turkey Meatloaf
1 pound ground turkey
Green pepper,yellow onion, garlic cloves, (Amounts are adjusted to your liking} I toss all these into my little food chopper and grind them up.
I add that to ground Turkey,
Take a bowl, I add 1 egg, salt, pepper and parsley, a few splashes of soy sauce. Mix together. Add that to ground turkey and stir in. (Go easy on the salt, you can always add more but you can never take it out once its there!)
Next I add 1/2 a can of tomato sauce, and grated parmesan cheese, again to your liking
When all mixed together start adding seasoned bread crumbs till the mixture is workable enough to mold into a loaf
Spay some cooking spray into a dish, mold your meatloaf, Cover with the other half can of tomato sauce, (Small can) or can put ketchup on top if you like. I usually cut up some red potato and carrots , toss them in a zip lock bag with a little olive oil to coat them, and surround my meatloaf with them, season the veggies, bake at 350 for about an hour, internal temp tp about 165/170, and enjoy! I Make a bigger one sometimes and use the leftovers in a lasana . Hope you enjoy it! Take Care,
