SKIM milk is fine as it is a source of protein and calcium- you should be adding a packet of sugar free carnation instant breakfast for added protein at this point- you are only a few weeks out you should not be drinking empty calorie beverages such as apple juice- your liquid intake should be limited to sugar free fluids such as crystal light and of course protein beverages/soups/milkshakes- not juice. There is absolutely no nutritional value of any consequence in apple juice to justify it.
I still have not had any juice since before surgery. I don't miss it. and I used to love juice before. but I don't want those empty calories. I rather have the real thing. An apple, orange, banana, strawberry, watermelon........ yummmmm love the real thing.
As far as how many grams of sugar per serving you should check your workbook the doctor gave you.
My doctor allowed anything 12 grams or less. But you have to be careful.

9/16/05 surgery date
I havent done any true juices since surgery but I did just find Ocean Spray Diet juices which have 2g per 8 oz serving. It is a nice change from Crystal light and plain water tends to hurt my pouch. They might help cut the sugar carbs and still make you feel like you are getting in fruit juice.
