First let me say thank you to Cyndee for hosting such a great party. It was great to meet so many people who I have followed on this board for so long. Everyone is so warm and giving. Dotty and I really enjoyed the conversations with all of you. Can't wait for the next event. Hope we don't have to wait until after the Thanksgiving/ Christmas/New Year holidays for the next get-together. We both had an absolutely wonderful time. So again, thank you to Cyndee and everyone else for a fun, hospitable and completely entertaining adventure. Now, for all those who asked, here's the Sugar Free Banana Bread recipe: Sugar Free Banana Bread Original Post by Becky Sue at 12:42 PM PST on 09/02/2006 Fort Wayne, IN - RNY (05/17/2005) - Brenda Cacucci, M.D. Ok, I made some fabulous stuff here, and I want to share the recipe, but keep in mind, I read a bunch of recipes and then combine them all together into what I think sounds good, rarely actually doing anything normal.... like measuring.... so, hopefully, I got it down right and if you try it, it comes out good for you, too. Dry ingredients: 1 2/3 cup all purpose flour 1 cup splenda 1/2 tsp baking soda 1/4 teaspoon baking powder 1/2 tsp salt Mix all dry ingredients in large bowl. I always measure dry ingredients into a sifter then sift into a bowl. This eliminates any chunks in the final batter. Wet ingredients: 4 ripe bananas, mashed - they were med size, not huge 1 teaspoon vanilla 2 large eggs beat lightly 6 tablespoons melted butter Mash bananas, add melted butter, mix, add lightly beat eggs, mix, add dash of vanilla, mix. I left the bananas slightly chunky. Fold banana mixture into dry ingredients until there's no dry flour left - don't over mix. Pour into greased, floured loaf pan (I used Pam to spray and a little flour to coat) - 9x4ish foil pan. Bake at 350 for about 45-50 minutes, it's done when a toothpick (in my case, a wooden skewer) inserted in the middle comes out clean. I use the small cupcake papers to bake these and it takes approximately 25 minutes at 350. Check with toothpick/knife (or whatever) in center till it comes out clean. I didn't put any nuts in it because my family doesn't like them, but I bet it'd be good with walnuts or pecans. Barbara B
