Julio's kielbasa soup

Julio, Just wanted to thank you for the recipe for kielbasa soup. I made it yesterday and it is delicious. I left out the potatoes and added chic peas. My daughter came over today and tried it. She liked it so much she took a container home with her. I love soup and on these cool days it's very comforting as well as filling and nutritious. I would love to get Kathy's stuffed pepper recipe. If you tell me where to find it I'll look it up and print it out. Once again thanks for sharing. I will be attending the Halloween party on the 27th and look forward to seeing you again and meeting the other people that I'm always reading here on OH. Barbara

Hi Christina, The Kielbasa soup is very easy. I dice up a white onion, Half a green and red bell pepper. A zuccini and a summer squash,(frozen veggies work as well) or any other veggie you like in your soups. Sweat them out in a pot till tender, add 2 cans chicken broth, 2 cans water,I add can of mushrooms, water chestnuts , again whatever you like and a sliced up KIelbasa. I use the Turkey Kielbasa as the mix of different flavors work well with it. Let simmer and enjoy! The key is to cook with what you like to eat! You cannot go wrong!

Hi Cyndee, This week can't go by fast enough for me. I can't wait for Friday. I am really looking forward to meeting everyone. My girlfriend is coming in from PA Friday morning and as soon as she gets here we'll be heading out for Windsor Locks. I've lived in CT all of my life and I've never been to Windsor Locks. I feel like one of those persons that live in NY and have never visited the Statue of Liberty. I'll be bringing a dessert for all to enjoy. See you Friday, Barbara

thanks barbara,,,i cant wait either..we set up the pool area tonight,i have to decorate on friday morning,afternoon,,i ordered balloons for erins birthday too. my kids are really excited.. see you soon..

Hi Julio, Thanks for the info. I did look up Kathy K's recipe and printed it out. It's another recipe I'll be making in the near future. My daughter called me today to say she enjoyed the soup so much she finished it all and wanted more. I told her I would print her a copy of the recipe so she could make her own pot of soup. Have you ever tried freezing it? It is so good I will finish off this batch quickly and there will be none left to freeze, but in the future I would like to make it and freeze a few servings for the next couple of weeks. Just wanted to know if you've ever frozen it and how it was when it was thawed. Looking forward to seeing you Friday. Barbara
