OT: FREEZER

Hey Everybody, I love Freezer bags!!! I made alot of stuffed green peppers( hamburger, cheese, mushroomsetc...) and put one each into freezer bag . This had made it so easier for me as working mom to make a quick meal or busier mom taxi after work to drive for my kids 's activies. I just grab the bag out from the freezer, put it into microwave so we can have good healthly dinner. I cannot live without Microwave ! Here is recipe I made Stuffed Green peppers yesterday Lasagna Stuffed peppers 4 large green peppers, halved lengthwise and seeded [I used 2 peppers and 2 very lg portabella mushrooms, gills scraped out] 1 pound ground beef 1 clove garlic, minced Salt and pepper, to taste 1/4 teaspoon garlic powder, divided 1/2 pound mushrooms, sliced [I omitted these--didn't have them in the house] 1 cup spaghetti sauce [I used a little more than 1 cup] 15 ounces whole milk ricotta cheese 2 tablespoons parmesan cheese 1 egg 6 ounces mozzarella cheese, shredded 1/4 cup parmesan cheese Place peppers in a large baking pan at least 9x13 inches; sprinkle inside of peppers with salt. Meanwhile brown the ground beef, garlic, mushrooms, salt, pepper and half the garlic powder; drain fat. Stir in spaghetti sauce and adjust seasoning as needed. Combine the ricotta cheese, egg and 2 tablespoons parmesan cheese in a small bowl; season with salt, pepper and remaining garlic powder. Divide ricotta mixture between the pepper halves. Top ricotta mixture with meat sauce; mound the mozzarella cheese over the top of each pepper. Sprinkle with the 1/4 cup parmesan. Bake at 350º for 45 minutes or until cheese is melted and browned.

Sounds Yummy Kathy! Will defintly give it a try! I do the same thing with large Zuccinni's, just slick off a third and holow it out, Take what I hollowed out and cook it up with peppers and onions and ground turkey and tomato sauce, Season to taste and stuff the Zuccinni's. Sprinkle some Parmasan Cheese over them and Bake for 40 minutes in oven. Quite yummy! Keep the recipies coming! Thank's!

Thanks for this recipe. I need ones like these that I can make some and freeze in freezer bags like you do. Bob works odd shifts and needs to take his own meals on some days. Sometimes I'd at a loss as to what to make that's not just meat and a veggie...etc. I'm gonna try these this week. The kids may even try the filling! Who knows? Paula

Finally! A stuffed pepper recipe WITHOUT rice! That is what I have never liked about stuffed peppers. This sounds yummy! A keeper for sure. Will make it for the Cliffmeister and me soon! Thanks. T.
