Cannellini Bean Patties (High Protein)

2 tsp Olive Oil 2 cups minced onion 2 large Garlic Cloves minced 1 teaspoon salt 1 cup minced bell peppers 2 teaspoon Ground cumin 4 cups cooked cannellini beans or two (20 oz.) cans, drained 1 cup minced fresh parsley 2 cups cooked brown rice 1 Tablespoon Fresh squeezed Lemon Juice black pepper to taste Warm Olive oil in saute' pan. Add onions, garlic and salt and cook on medium. Heat until onions are tender. Add Bell Peppers and Cumin and cook for about 5 more minutes. Remove from heat and set aside. Thoroughly mash the Cannellini Beans by hand in a large mixing bowl. Combine the parsley, rice and lemon juice with the beans. Add the cooked vegetables and mix well. Add pepper to taste and more salt if needed. Shape the mixture into small patties. Prepare a large saute pan over medioum heat and add very little cooking oil. Saute patties over medium heat until golden brown on one side and flip to do the same on the other side. Serve hor or at room temperature with a salad or steamed vegetables..... Don't knock it till you've tried it. It is good.

Hi Laura, They sound yummy but brown my pouch doesn't take to well to brown or white rice. Great Recipie tho and thank you for shareing!

I am with Julio and Carla because my pouch won t take brown or white rice and any things make white flour stuffs made me sick . Thank you for sharing! Kathy K

Hmm..actually it sounds really good to me. But, I am in the same boat as Julio. I can tolerate brown rice a little better than white but not very well. Maybe we can adjust the recipe and use more beans and cut down on the rice!! Will give it a shot. Thanks! Carla
