Graham Cracker Cake Recipe

Hi Everyone, At Tammy's request I'm putting through a very easy recipe that I hope you all enjoy. Everytime I make it...it's the first thing to go at a pot luck! Size 9 X 13 pan 1 1/2 boxes of plain nabisco graham crackers. (regular or lower fat) These should be plain not sugar coated or chocolate flavored. 2 boxes of your favorite fat free/sugar free jello instant pudding. (Chocolate is awesome...Cheese cake flavored is YUMMY) 1 tub of lite cool whip or sugar free. Make pudding according to directions. (hint for thicker pudding I use 3 cups of milk instead of the 4). Think of this cake like a lasagna...it's all layers. Start with a small amount of pudding on the bottom of the pan to help the first layer of graham cracker "stick" Next start your layers... put WHOLE graham crackers on top of pudding. (you may need to break some portions into smaller pieces for the edges or if you're using a bigger pan) Next a layer (don't be stingy) of pudding make a nice even coat of pudding Next layer of graham cracker Next layer of pudding and so on.... keep layering. (again don't be stingy with the pudding it's the key!) your last layer should be the remaining pudding. Top with cool whip, cover and let sit in the fridge over night or up to 24 hours. Keep chilled until you're ready to serve. When cutting it looks like a trifle or a "lasagna" It is absolutely yummy and easy to do in a pinch. I've made all different types of this cake. The favorites are pumkin mouse & cheese cake, chocolate & banana. Get creative. I've put fresh fruit in it or on the top right before serving. If you use two puddings...just alternate the layers of pudding. Hope you enjoy..the one I made today was gone in 5 minutes...people SNARFED it & they don't know that it's sugar/low fat free. Hey Mickey! Thanks for the recipe! Good ole 'ice-box' cake - at least that's what we used to call it in the 'olden' days!!! Now - what kind of graham crackers do you use?? I haven't found a graham cracker with low enough sugar for me to eat. But I do love the sugar free puddings and cool whip! Thank God we have those at least for the occasional treat!
