Hi Tammy, Looked like a good day of eating to me. When I make fried eggplant I slice them, run them thru an egg wash and bread them and take a baking pan and spray it with pam and spray the eggplant slices with olive oil and bake them at 400 degrees for 15 minutes. Alot less messier than frying,. Do the same with boneless chicken breasts and chops as well. Have a great weekend!

That sounds so much easier Julio - I'll definitely try it - we have a ton of egg plants coming in! The tomatos are just starting too - we are going to have ten zillion of them! The brocolli didn't do good this year - but the summer squash were awesome -they're almost past - the green beans were perfect we picked them small so there weren't any stingy edges - I love having a garden!
