RECIPES FOR A POTLUCK ANYONE???

Hi Guys, I have a potluck to attend next week and was wondering if anyone has a recipe of something I can make so I can eat it too. Keep in mind I'm 6 weeks post-op so it has to be something kinda mushy! Thanks, Paola

Hi there, Paola! It's Frances! How are you doing? I promise to call sometime this weekend to say "hi"! As for recipes, I'm not a cook. So I'm not good with recipes, but here are some ideas:    - Some sort of yummy mashed potatoes with spices and cheese (I've found this great Mexican cheese stuff that has jalapenos in it - very yummy).    - Some really great beans - I got these at Chili's - they were brown beans with onions, cheese, and fresh diced tomatoes. Mmm, mmm, good.    - Some chicken tortilla soup - I like Red Robin's the best, and I found something real similar at Sam's - it's a chicken tortilla soup mix from Bear Creek that includes high quality chicken, black beans, and everything else you could want. Garnish with extra cheese, and you have an EXCELLENT meal.    - Well heck, while we're talking about Bear Creek soups, their potato soup is to DIE FOR! And that's all I can think of. There is a new recipe forum here on the site somewhere - you might get some more ideas from that. Or, I've heard that splenda.com is really good if you're looking for ideas for dessert-type stuff.
