Taco Bell Beans & Cheese and even now, 6 years later, I remember how incredibly good they tasted. I then moved on to adding the meat from a taco to them and it was pure heaven. Ricotta cheese with tomato sauce, cottage cheese with strained salsa, pureed canned soup, egg salad. I ate alot of mashed up eggs with lowfat mayo. It was something that sat very well with me.
That should get you started. Make sure you take your time, no matter what you go with. Small bites and slowly. Put your fork/spoon down between bites. It forces you to eat slower. Good luck.

Im trying to remember what the first things i ate were, as it was so long ago, LOL I think it was cottage cheese i was just grateful to chew, LOL then i moved on to refried beans (which btw im sick of those) chicken salad, yogurt, tuna,

The first thing I ate in the puree stage was refried beans and cheese. My fav was baked Riccotta Cheese from theworldaccordingtoeggface (recipe below). Very yummy! I also loved Wendy's Chili! Lots of protein and easy on the pouch! Grits and cream of wheat are still my favs too!
Shelly's Baked Ricotta
8 oz of Ricotta Cheese
1/2 cup grated Parmesan
1 large Egg, beaten
1 teaspoon Italian Seasoning
salt & pepper to taste
1/2 cup Marinara Sauce
1/2 cup shredded Mozzarella Cheese
Mix ricotta cheese, parmesan, beaten egg, seasonings together and place in a oven proof dish. Pour marinara on top and top with mozzarella cheese. Bake it in the oven @ 450 for about 20-25 minutes (best) or nuke it till hot and bubbly. I usually made it first in the oven and heated the leftovers in the microwave.
For a sweet Italian fix:
Mix ricotta cheese and SF Torani syrup for a mock cannoli filling.
