Outback has been one of my favorite places to go post surgery.. I always get a cup of the french onion soup and an 'add on mate' of the crab legs.. That's it.. and usually I can't finish the crab legs.. :)

Black Bean Salsa Chicken Recipe in a Crock Pot. It was so yummy. So I will share the recipe. Black Bean Salsa Chicken Recipe in a Crock Pot.

2 to 4 boneless, skinless chicken breasts
1 can of cream of chicken soup and 1 can of chicken broth

1 cup salsa
1 can (15 ounces) corn, drained
1 can (15 ounces) black beans, drained
1 package of Taco seasoning
1/2 cup sour cream
1 cup grated cheese

Place chicken in greased 3 1/2 to 5 quart slow cooker amit this step if using a crock pot bag. Pour soup, broth, salsa, corn beans, and taco seasoning over chicken. Cover and cook on low heat 6-8 hours or on high 3-4 hours. Remove chicken with slotted spoon and place on serving dish. Stir sour cream and cheese into sause in slow cooker, then pour over chicken. Makes 3-5 servings.

For din din I had a lite salad with some cheese. I will have a protein drink for snack later.

I also steamed some carrott but only had a bite or two, they are really for lunch tomorrow.

That me plate, and I am sticking to it...........

So..its all about being honest and being accountable right? So I had an extra ****ty day at work today...so my din din was a Dirty Martini! may have not been the best choice...but damn  it made me feel better!
I am off to drink an AchievOne now!

Last nights dinner was pot roast, potatoes, veggies and a big salad.  I had pot roast and veggies and salad.. The rest of the gang enjoyed the tatters.

I'm with you Nay.. I never really enjoyed cooking before but I love it now.. and I don't follow recipes either, usually (cept when baking).. it is always more fun to experiment and enjoy the results!

Tonight is hubby's birthday so we are going to the Hotel Del for dinner..  They will serve me WAY too much food and I will only be able to eat 1/4 of what is on my plate.. but it will be yummy!
