What's for dinner?

Hey Everyone,

Well, here I thought my days working late were over, and I just got 2 calls about big meetings from other office wanting to take place in here.. grrrrrr

So it looks like I won't be working normal hours yet.. grrr

Tonite for dinner is stuffed steaks!  I have been craving these, and the thin flank steaks were on sale.. so why the heck not!

What I do is take a flank steak, then spread f free cream cheese, that I have seasoned on one side, then a slice of swiss cheese, a handful of fresh spinach, and some red bell pepper.. roll it up and secure it with toothpicks!  Then season up the outside!!  Then I bake it!  It's DELICIOUS!!!!

I'll probabally pair it with a nice green salad, or some asparagus!

What's everyone else having for dinner? Hope you enjoy it!

It was really yummy!!!  I got the idea in trader joes, they sell the stuffed steak pinwheels.. and I looked at it... and was like.. I can do that better and cheaper!  And viola!!!!  I did!!!    It was much easier than I thought it would be!

Hi! We are having white chicken chili tonight.  I keep cooked chicken in the freezer for quick night dinners like these. All I have to do it cut up and saute a onion, add chopped garlic to it. Open 2 cans of white beans and a can of shoepeg corn, dump them all in with a box of chicken stock. Squeeze in some lime juice, add a tsp or so of chili powder, and the chicken, bring to a boil then simmer about 20 minutes. Last chop up one bunch of cilantro and toss in before serving! YUMMY and easy! Have a great night!

Oh Renee, that sounds soooo good!! I have to try that sometime!

Tonight I'm not cooking. Went out to "Linner" with my friend at I-Hop at 3:30, so I'm not hungry. And the rest of the family can fin for them self's! lol

I had I-Hop's garden scramble, with a bowl of fruit (instead of pancakes). Of course I have enough left over for at least 2 more meals! LOL.

I LOVE eggs any time of the day!!!!  And I also love that instead of hash browns or pancakes or whatever, places let you sub in fruit!!!  Makes it so much easier!!!

Stuffed steaks turned out awsome!!!  Hubby loves them!

I wrote that one down!  It sounds yummy.

Salmon terriaki with pineapple.  Another Frozen Trader Joe's frozen fish.  Can you tell where I shopped last weekend? LOL

I'm not having any of the pineapple.
