What's for dinner???

Sooo last nite I had such an awful commute.. I literally got home, got into bed and hid under the covers with my little dog Spike.  I woke up an hour or so later.. and chad made me my ultimate comfort food.. Eggs!  So I had scrambled eggs with cheese and spinach for dinner!  He was happy, he went and got In & Out.. yuck!!!!

Tonite,  we will be having the grilled chile lime chicken and zuchini for dinner!!!!!  Hopefully BART won't be quite so miserable!  *fingers crossed*

Sooo what is everyone else having for dinner???

I am still in AZ, until tomorrow but my BF loves my salmon patties so that is what I fixed..Yum. Really tastey.

We are having crock pot pot roast with veggies. Been in the crock since 11am. So it will be falling apart by the time we eat.

Oh and I am not sure what I will be having for dinner tonight but for lunch did have a wildrice stuffing chicken breast that was really good from the frozen section in Target. LOL

Hi Stacie,

I didn't follow a recipe, this is just something I came up with myself.. just threw together as I went.  Here's what I posted!

For the sweet potatoes.. I cut them into little cubes and then heated up a big skillet put in a little olive oil and garlic.. then I added the sweet potatoes, a couple splashes of orange juice, a couple splashes of captain morgans, cinnamon, cloves, nutmeg and black pepper and let the sweet potatoes soak up all the liquid and glaze!  It was delicous!    I do a similar recipe with plantains that my husband LOVES.. but I had the sweet potatos on hand and thought I'd give it a try!!!!!!!

I made this up.  But probably not.  I took Margarita Mix and cilantro, onions and garlic.  Simialr to your tequila lime chicken.  Not sure how it will taste.  Good I hope that it tastes good,  Its been marinating all day,  Some Brocoli (sp?) they will have garlic rice.
