I love this post. Thanks for bringing it back Renee, and for your great dinner ideas! I've been lurking for a while.

My dinner tonight isn't anything too exciting - but, I'll share anyway. I'm having a low carb tortilla wrap with turkey (Jenny-O sliced/roasted sundried tomato turkey), a slice of havarti cheese, and tomato. along with a few TJ's soy crips.

I've had a grouchy pouchy for several days so it was soup and salad for me. unfortunately, it still made me nauseous.  Hoping tomorrow is better.

I finally get to have some sort of "food" tonight!! I pureed some canned chicken with chicken broth and some low fat mayo. It was soooooo good!! It was hard to make myself eat it slow, lol.

Taco salad...no beans...a little pico de gallo.   

Got three bites in...now working on an Isopure Drink instead.

I made eggface's Brushetta Bites...and lemme tall ya...they were OMG GOOD!!!!!! Very filling too! Lotsa protein! I don't have a mini muffin tin, so I used a regular one.

Shelly's Bruschetta Bites

5 Green Onions, diced
1/2 Yellow Onion, diced
2 cloves of Garlic, diced
1 teaspoon Butter
1/2 teaspoon Kosher Salt
a few twists of Black Pepper
1/2 cup Bruschetta Sauce, drained of excess liquid (I used Trader Joe's but Contadina & Buitoni make one too - find in the fresh pasta section)
5 Eggs, beaten
1/4 cup Parmesan, grated
1 Tablespoon fresh Basil, chopped
Small fresh Mozzarella balls (nickle size)Trader Joes

Preheat oven to 350 F. Saute onions in butter till golden. Add garlic cook 1 minute more. Set aside to cool.

Mix all ingredients together. Be sure veggie mixture has cooled slightly before adding to egg mixture. Spoon (I use a small ice cream scoop) into a lightly greased mini muffin tin.

I made half the batch with a surprise middle by inserting 1 small fresh mozzarella ball in the middle. Bake for 30 minutes. Makes 24.

thanks to STILL having an ouchie pouchie,  I had some cottage cheese and then for a snack I had another protein shake.
