What's for dinner???
Hey Everyone,
So last night I made jerk pork steaks, carribean sweet potatos and a spinach salad with goat cheese, cucumbers, almonds, driend cranberries and a basalmic vinegrette! Dinner was YUMMY! And I had the left overs for lunch today!
Soooo for tonite, I'm going to make spinach and ff cream cheese stuffed salmon and zuchini.. maybe another salad too!

Tonight is BBQ ribeye steaks, steamed asparagus, and sometime of biscuit or roll for the Sams.

Ok.. this was a fairly easy meal! I didn't follow a recipe, just threw it all together myself.. here's what I did.
I took a big spoonfull of Walkers Woods Jerk Sauce (got in Jamaica) and mixed it with a some olive oil and a little bit of water and let the steaks sit in them for a few hours.
Then when they were ready I just seasoned them with another dry jerk rub (again, I got in Jamaica) I don't remember the brand name, but it's AWSOME! I'll look at it when I get home. And then, just threw them on the grill
For the sweet potatoes.. I cut them into little cubes and then heated up a big skillet put in a little olive oil and garlic.. then I added the sweet potatoes, a couple splashes of orange juice, a couple splashes of captain morgans, cinnamon, cloves, nutmeg and black pepper and let the sweet potatoes soak up all the liquid and glaze! It was delicous! I do a similar recipe with plantains that my husband LOVES.. but I had the sweet potatos on hand and thought I'd give it a try!!!!!!!
