What's for dinner???

Hey Everyone,

So last night I made jerk pork steaks, carribean sweet potatos and a spinach salad with goat cheese, cucumbers, almonds, driend cranberries and a basalmic vinegrette!  Dinner was YUMMY!  And I had the left overs for lunch today!

Soooo for tonite, I'm going to make spinach and ff cream cheese stuffed salmon and zuchini.. maybe another salad too!

I'm feeling GOOD today for the first time in forever, so I'm cooking for the family.  Oven baked fried chicken, fresh green beans, probably a rice/veggie dish, biscuits for them, and a low fat raspberry cheesecake.  I figure I might as well use the energy while I have it!  They'll be happy.

My kids are having Lazagna and I think I am going to have a filet.  I know maybe only a few bites will go down but for now that will work.  I don't know what with it yet, I think I will make those tomatoe things that Janine was telling me about.

Tonight is BBQ ribeye steaks, steamed asparagus, and sometime of biscuit or roll for the Sams.

Ok.. this was a fairly easy meal!  I didn't follow a recipe,  just threw it all together myself.. here's what I did.

I took a big spoonfull of Walkers Woods Jerk Sauce (got in Jamaica) and mixed it with a some olive oil and a little bit of water and let the steaks sit in them for a few hours.

Then when they were ready I just seasoned them with another dry jerk rub (again, I got in Jamaica)  I don't remember the brand name, but it's AWSOME!  I'll look at it when I get home. And then, just threw them on the grill

For the sweet potatoes.. I cut them into little cubes and then heated up a big skillet put in a little olive oil and garlic.. then I added the sweet potatoes, a couple splashes of orange juice, a couple splashes of captain morgans, cinnamon, cloves, nutmeg and black pepper and let the sweet potatoes soak up all the liquid and glaze!  It was delicous!    I do a similar recipe with plantains that my husband LOVES.. but I had the sweet potatos on hand and thought I'd give it a try!!!!!!!

I was just reading the post-op nutritional guidelines OH shows and it lists sweet potatoes as an acceptable food. I know we're supposed to avoid starches, but we do still need a little of everything in our diets. I don't worry about eating potatoes once in a while because I don't eat enough potatoes and I don't eat them often enough to worry that I am overdoing it.

I don't eat regular potatos.. but I read that sweet potatos are much lower in carbs and higer in fiber.  I only was able to eat a couple of cubes!

After last night...I am not so sure. I made chicken last night (thigh) and the first bit went down just fine...the second one had me gagging??? I have no idea what happened or why but I am swearing of chicken for a little while. I ended up having cottage cheese with a little salsa on it. Yum! I am trying some ground turkey tonight, I think. right now nothing really sounds very good.??
