What's for Dinner tonite?
Easy Peasy...it is actually my sisters recipe...
Make your basic meatloaf...here is mine, but any basic recipe will do:
Mix together in a big bowl:
1lb ground meat (any kind will work)
1/2 c bread crumbs
1 egg slightly beatened
1/2 c diced onions
1/2 c diced celery
1/2 c diced bell pepper (optional)
1 tsp salt
1/4 tsp black pepper
1 tbsp Worcestershire
1/8 tsp garlic granules (I usually use fresh 2 or 3 crushed cloves)
1 tbsp mustard (basic French's)
This is where it goes special:
1 tsp Cumin
1 can El Pato Sauce (Mexican Tomato Sauce)
1/2 can diced green chilies (if you like it real hot, use diced jalapenos)
Transfer it to a foil lined baking pan and shape. Then using your index finger poke holes all over the top...yes, weird. Then pour a can of El Pato Sauce over the top...filling the holes. Cover with hunks of velveta or other processed cheese...cover with more foil. Bake 350 for about a hour and a half to two hours. This can also be made in the microwave.
