What's for dinner???
Well it's another scorcher in my neck of the woods! I had a nice chicken and spinach salad for dinner last nite..
Tonite, I have some chicken legs defrosting in a marinade.. but I forgot what type of marinade I froze them in! hehehe so it will be a surprise for us tonite!!! I'm going to throw them on the grill. We still have zuchini, so I will season them up with my trusty dude dust, and they will go on the grill as well.. and a nice little spinach salad, with some sun dried tomatoes, cucumers, hard boiled egg and garlic toasted walnuts!
And I will have a glass of sangria while grilling!

On the way in from LA for a dental/jaw consult, we stopped in El Monte to pick up some Tamales. I'll make some FF refried beans to go with them... =)

Ingredients: | 1/2 lb. hamburger 1/2 lb. Italian sausage olive oil Italian seasoning pizza sauce (Ragu makes one that is very low in carbs) motzarella cheese toppings to taste (I like pepperoni, onion, green pepper and mushrooms) |
How To Prepare: | Preheat oven to 450. Mix hamburger and Italian sausage and press in a baking dish (I use 8" x 10"). Drizzle with olive oil, sprinkle with Italian seasoning and a little salt and pepper. Bake until almost done (10 minutes or so, depending on pan size and meat thickness). Remove from oven and top with sauce, toppings and lots of motzarella cheese, sprinkle with a little more Italian seasoning. Put back in oven until cheese is golden brown and bubbling. |

Thai Tofu Red Curry
Sauce:
1" fresh ginger grated 1" root
garlic, 2 chopped 2 chopped
lime, zested 1 lime
Thai Kitchen Roasted Chili Red Paste 1 tsp
"light" or unsweetened coconut milk 1 C
shiitake mushrooms, stemmed & thin sliced 3 oz
basil, fresh, thinly shredded strips 1 C
Protein:
3 oz firm tofu cut into cubes
1 oz shrimp
Pour 1 tsp oil in pan, add ginger and garlic. Cook 30 seconds.
Add 3 oz tofu and cook for 1 minute. Set aside in a bowl.
Add mushrooms to pot and saute 1-2 minutes.
Add everything else except basil to pot.
When heated through, ladel ½ C into a bowl, covering tofu and shrimp.
Top with shredded fresh basil. Soooo Goood!
Save the leftover sauce and use it on chicken next time.
