I am  almost sure I saw a crockpot recipe posted here that sounded yummy.  Maybe I'm imagining it and oh that's likely with me. It had chicken breast, taco seasoning, fat free refried beans, salsa & black beans?

I would love to try it but I don't want to leave anything out. Thanks in advance!

Thank you , Thank you, Thank you!!! I thought it was posted on "What's for Dinner" but I couldn't find it anywhere. At least it was posted somewhere and I'm not really losing my Mind.

Lauren,

Liz is correct, it is a killer dinner and easy!!  I have made it in the past and my family loved it.

Funny you should post this, Lauren.  I just finished chopping my onion and peppers and have them waiting in the fridge with the chicken breasts. Everything else is lined up in order so I just have to dump them in the crockpot in the morning!!

Lauren, here it is again

It is crock pot fajitas.  Couldn't be easier.
I will tell you all what is in it.
 4 boneless skinless chicken breasts
1 package taco seasoning
1 onion chopped
2 bell peppers ( any color, I used red)
1 can fat free refried beans
jar salsa
1 can tomatoes ( I used Rotel for some kick)
1 can black beans rinsed and drained.

Layer all of this in the crockpot in the order as listed.
Cook on low 6-8 hours
I took the chicken out and shredded it then back into crockpost.
Serve with tortillas.
( that is how my family had them.  I just had the meat with a small teaspoon of sour cream, some lettuce and cheese.)

It made so much I am going to freeze the rest for another meal.

Just had to share.  The chicken so moist anyone with chicken issue will probably do well with it.

No problem it is yummy.  I have had several meals from it.  We had it one night for dinner.  I took some to work for lunch myself and co-worker.  I did not eat the tortillas.  My son had it for lunch yesterday as a burrito loaded with rice, cheese, onions.  Today my husband had a burrito for lunch same as my son.  There still is enough for another meal and some lunch.
Makes a ton of food.
Enjoy
