EZ TORTILLA LASAGNA – 4.5 C/S
Makes 12 servings
4 99% Whole Wheat Tortillas (48 carbs/36 fiber) cut into 1 1/2" wide inch strips (about 4 per tortilla)
2 lbs burger
1 cup chopped bell pepper (6.5 carbs/2 fiber)
1 clove garlic (1 carb)
1/3 c red table wine (3 carbs)
1 cup of Ragu Old Fashioned Spaghetti sauce with mushrooms (20 carbs)
1 pint of cottage cheese, whole milk (6 carbs)
12 oz lbs of Mozzarella (12 carbs)
Total carbs: 90.5/38 grams of fiber or 12 servings at 7.5 carbs / 3 grams of fiber each (deduct fiber if following PPP 7.5 minus 3 = 4.5carbs each.) Brown the burger garlic and bell pepper then drain fat. Add the spaghetti sauce and wine. Let simmer while you prepare the rest of the ingredients. Grate the cheese. Use a 9 x 14 in baking dish and place 1/4cup of water in the bottom, then cover with about 1/2 cup of the meat mixture and spread it lightly around. Layer 1/2 of the tortilla slices then 1/2 of the remaining meat, then 1/2 of the mozzarella and then all the cottage cheese. Finish layering with the remaining tortilla strips, meat then mozzarella cheese. Bake at 350 for about 30-45 mins
