Healthy Cookie Recipe!

I was jonesing for some cookies yesterday...wanting to be healthy, too... had some rolled oats on hand...found this on the Internet...YUM... if you like pumpkin, and if you like oatmeal.. it's a winner!

Low Fat Pumpkin Oatmeal Cookies

These low-fat pumpkin cookies are great for the fall holidays and make a healthy after-school snack for the kids too. Try them. You won't believe how good they are until you do!

Ingredients:

1 c. pumpkin
2 egg whites, whipped
1 c. brown sugar, packed (I used Splenda's brown sugar....halve it, if you do, too)
1 1/2 c. all-purpose flour (I used whole wheat flour)
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. cloves
3 c. rolled oats
1 c. raisins (optional, of course!)

Directions:

Spray baking sheet with cooking spray. In a large bowl combine pumpkin and egg whites. In a separate bowl combine sugar, flour, baking soda, cinnamon, nutmeg, cloves, oats, and raisins. (Batter will be very dry at first.) Mix ingredients together just until moistened.

Drop cookies by tablespoonfuls onto prepared baking sheet, 2" apart. You can leave the cookies in the shape of a ball (the baked cookie will still be a ball) or flatten them out with the bottom of a glass before baking.

Bake at 350 degrees for 15 minutes.

I am making these on June 13th, when I can eat carbs again!  I as well, LOVE anything pumpkin flavored!  When I was doing Weigh****chers I used to make brownies with pumpkin in it instead of the oil.  Oh, yum!  I have to stop thinking about all this yummy stuff! j0436252.png picture by deannayng

Ok, pumpkin in brownies sounds to die for!!! Anyway to make that recipe WLS friendly??? lol  What did I miss, why aren't you eating any carbs right now?  You are looking fabulous sweetie! Hi Becky!  I'm so happy that you will come to visit me!  LOL! I'm not eating carbs because I'm still in my first 6 months, and my Dr. wants you to limit them during that time.  Although, my friend doing Atkins always has to point out that I'm really eating plenty of carbs (milk, fruit, etc.!)  I guess it would be more accurate to say that I'm not eating starches; bread, rice, pasta, potatoes, corn, etc.  Although I have had a few slip-ups!  Some fat free crackers one day when I wasn't feeling good (I had to throw away the box because they were just too yummy!), a fortune cookie that I virtually inhaled in a moment of weakness while eating mushroom chicken, and a couple of others.  But overall, I've had virtually no starches in almost six months!  I've been joking that the first thing I'm going to eat is rice on a cracker wrapped in bread and dipped in mashed potatoes!   Hey, those brownies really were weigh****cher friendly, so I think they wouldn't be too bad for WLS!  Actually, I've been wanting to try this Devin Alexander recipe for brownies that sounds really good (she's the queen of re-working recipes to make them healthier!)  I think you could just substitute pumpkin for the applesauce.  The texture comes out weird when you use pumpkin, they don't rise much and are heavy and moist, but they are yummy! I've been joking that the first thing I'm going to eat is rice on a cracker wrapped in bread and dipped in mashed potatoes!   Now that is funny!!!                  It is so funny to me how different surgeons plans are! I'm not ever suppose to have pasta or rice again. I don't plan on ever eating rice and have only had 1 or 2 bites of pasta occassionally. Mashed potatoes I did pretty early out but only with lots of cheese added for protein. I don't really do breads, but I do low carb tortillas. Sometimes I do the crust of breads. Like at Souplantation I get the sourdough ends and peel the bread out of it and just butter the crust. It is soooo yummy! I really haven't done much corn, it is kind of hard to chew well.    I love fortune cookies!!! I don't think they are too too bad for us, lower in sugars than most things, but does take the sweet tooth away! And I love moist and heavy brownies! lol brownies have always been one of my favorites and I'd love to come up with a legal brownie.
