Pork Rinds? What do you think?

OK, I'm 10 weeks post-op, and have more than three months to go before I can incorporate carbs back into my diet.  I never thought I was a carb-aholic, but man, what I'd do for just a bite of brown rice right about now! Anyway, I was at the store, and I saw pork rinds.  I was never too much of a fan of FRIED PIG SKIN before, but it dawned on me that people doing Atkins eat pork rinds.  I checked out the nutritional info (Cal=70, Fat=4 grams, Carbs=0, Protein=8), and found that a serving actually has fewer calories and fat than a serving of string cheese, and more protein.   I made nachos tonight with pork rinds, lean ground beef, tomatoes, FF sour cream, and salsa.  It was hands down the most satisfying thing I've eaten since surgery.  The crunch of the pork rinds was AWESOME! I didn't dump on them, and the texture was fine on my pouch, but I just don't know.  I mean, pork rinds?  Aren't they the quintessential "bad" food?

You would think so, but I know quite a few people who snack on them.  I, myself, was going to snack on them, but find my little pouchie can't tolerate them.  I eat one and it is making a repeat appearance.    Plus,it's not like you can eat the entire bag of them.  I know some people heat them up...again not for me, but I'm glad someone can enjoy them.

Hey DeAnna! I LOVE pork rinds...but can only eat a few at a time cause they are so darn dry...but I bet as nachos they were good...I will have to try that. If they are a 'bad" food...I will take a bad food that has 0 carbs and 8 grams of protein!!!  You are right...they are big snack food for the atkins diet! Like my surgeon has always told me...moderation is the key!!! Thanks for the tip about the nachos girl!

Hey Lisa-Thanks for the reassurance!  And yes, the nachos were yummy!  Next I'm going to try them with cottage cheese, because you are right, they are dry!

I sometimes eat pork rinds too.  I use them as "dippers" for tuna salad or refried beans with cheese or cowboy caviar.  And like you, I like the crunch!!  Your nacho idea sounds good too....I'll have to try that.

Hey Laura! I had to look up "Cowboy Caviar", because I've never heard of it!  The recipe I saw consisted of black beans and other yummy things, is that your version?  Sounds yummy, and much better than real caviar!  As soon as I can start eating beans again, I will be making it!

I like to sprinkle pico de gallo or chili powder over them and then squeeze a lime. Yum! Plus it takes out some of the dryness.

DeAnna:  Wow!  Check you out in your new photo!  Girl you look really wonderful. As for the pork rinds.  I think I'll try them.  I'm dying for cruncy, salty food.  I guess I didn't think of them before because of the 'fried' idea but it sounds like they meet our 'requirements' from Coates.
