Hi sweetie pie...... It makes a very large pot.  But it freezes wonderfully.  Get little containers and freeze them and then you just pop them in the microwave, defrost, heat and eat. You can of course cut the quantify in half, but I find it hard to use just have the package of taco seasoning and hidden valley, so I usually just make the whole thing and freeze it. Sprinkle a little cheese on top and it's perfect for a cold winter night.  It's just incredibly filling. We miss you here in the IE.  Come visit us again.  Steph

My Crockpot is usually full when I make this. It is just yummy.  I also not only will I use cheese but also some low fat sour cream. Liz

My recipe is a bit different, I got it from WW One can each of pinto,black beans, kidney beans,pinquintos and corn(if desired) Do not drain them, use the juices in the beans.) 1 lb lean ground meat browned 1 pkg each of taco seasoning and ranch dressing mix I put onion flakes too. My hubby loves this with cornbread, but I like a few of the spicy lf tortilla chips with mine.

I forgot the Rotel.  Or one can of tomatoes with chilis and I put another can of petite diced tomatoes too.
