Hey there, here is a recipe I've been making for some time now. It's great for breakfast, lunch or dinner; high in protein, some good veggies, and yummmmmmmm.

I'm posting the original recipe, then the modification to make it with a different flair. Hope you like it as much as we do!

Crustless Spinach Pizza

2 cups 2% shredded Italian cheese---DIVIDED
10 oz pasta sauce, any type. I like the spicy tomato and pesto by Classico--- DIVIDED
1/2 c Egg Beaters
8 oz part skim ricotta cheese
10 oz frozen chopped spinach, drained and squeezed dry
salt & pepper to taste
oregano and basil to taste--just have fun!

Preheat oven to 400
Spray a medium sized cookie sheet ( I want to say it's about 9x11)

In a bowl mix together spinach, 1/2 c cheese, 1/4 c pasta sauce and remaining ingredients

Spread it out onto the cookie sheet, making sure it's all the way to the edges and even. Spread the remaining sauce over the top, the  spread the rest of the cheese all around.

Bake for 20-30 min until set, bubbly and browned.

The recipe says 8 servings, but we can probably get 16.

Nutrition:  (based on 8 serv)  130 cals, 6 gr fat, 7 carbs, 12 protein

To make a Mexican version, use Southwestern Egg Beaters, Chunky Salsa instead of pasta sauce, and Mexican blend cheese

These can have all sorts of possibilities. Add different veggies like diced onion and mushrooms. Diced turkey pepperoni, or cooked and crumbled extra lean ground beef.

I make one of these and eat on it all week. Travels well to work for lunch, makes a tasy bkfst, too!

I am also thankful for the meeting last Thursday.  I always feel rejuvenated and ready to tackle another month.  Thanks for all of the advice and patience with my endless questions!  I can't make it to the walk due to a scheduling conflict.  We are taking our 3 year old on the Van Buren train ride, which will be great fun...especially since I can walk and fit into seats better!  Have a fun time and walk further than you think you can.

Since he and his wife have two children at home, Chef Dave is dedicating much of his time fighting childhood obesity and is developing school lunch programs in Oklahoma that will contribute to healthier lifestyles. Connie Stapleton, Ph.D.

Dr. Stapleton is a licensed psychologist and owner of Mind/Body Health Services in Augusta, GA.  She is an expert in recovery from addictions of all sorts, and her passion is the mental, physical and spiritual health of parents and families.  Her book, Eat it Up! Dan Benintendi

is an OH Support Group Leader,  inspirational post-op and athlete.  Dan shed morbid obesity and has since transformed his life. He lost 201 pounds in 14 months and has completed 10 triathlons.  Dan's participation in races helps him raise money to assist with funding childhood obesity awareness programs and activities.

 

Annessa Chumbley, RD 
is a dietician that specializes in working with bariatric patients.  Annessa's approach is to encourage people to embrace wellness in every aspect of their lives.  Her forte is creating healthy recipes, wellness presentations and cooking demos as part of her company, Flourish LLC .  Annessa is also a published writer, OH professional blogger, public speaker and has a dynamic nutrition segment on CBS WISH-TV Indy Style.

Thanks for posting this!  I was in charge of the walk two years ago and I know it takes some time for them to get the links activated after they've received the check from the local committee.

Great to see you and chat the other night. We need to do it more often!

You know the tool is still there, it's the whole "using it' that's the tricky part now. I completely understand where you are, though. So much goes on in our lives it's hard to concentrate on ourselves.

For those of you that attended the Support Group Meeting last night, I wanted to tell you how much I enjoyed it and needed it!!  It is so very helpful just to be surrounded by a group of people that have been there and now exactly what you are experiencing, in addition to lots of helpful tips.

In the meeting the subject of the Walk from Obesity came up.  Here is the information that I received on the flyers I received from Dr. Baker's office this week.  First, the walk is Saturday October 9, 2010 at 8am in downtown Little Rock along Riverfront Park.  I received a registration form attached to it that gave me some helpful information at the top regarding registration for the walk.  Here are some options:
1) To save $5 on registration, use your credit card to pre-register online for $25 at www.walkfromobesity.com.  Click on "Join the Walk" link and choose the city you would like to register for (Little Rock).
2) You may also download a printable registration form from the same website after choosing Little Rock.  You can either mail it in ahead of time for save $5 on the registration or just bring the form with you on the day of the walk.
 
I already tried it and everything seemed to be working ok.  The link for Little Rock opened up fine and there was more information regarding the location and details of the walk, along with contact information.  It also gives you option when you register to register as an individual, family, join a team, ect. 

Anyway, I hope this helps out and I plan on registering myself very soon.  Hope to see you all there and hoping for a beautiful fall October day for the walk!!!
