late leaving the dock, what are you eating and a NEW recipe to try
Good morning one and all!
I slept in this morning, hence the late start.
Trying to figure out the cause of my gaining I went back through my fitday.com journal for one year plus. I'm eating the same now as I did then. Who knows.
Any way, here's my day. I've also included a new recipe that I'm going to try. It's from South Beach Diet Phase 1, and something that I think will work well as either breakfast or snacks.
latte
b--1/2 baked chicken chimichanga ( last one, gotta get rid of it)
latte
cottage cheese w/ applesauce
whole wheat pasta and black bean salad
protein bar
crustless calzone, sweetpotato
cottage cheese/applesause
cals: 1301 fat: 34 carb: 169 pro: 87
Vegetable Quiche Cups
3/4 c egg substitute
1 10 oz pkg frozen chopped spinach, thawed with all of the water squeezed out
3/4 c reduced fat shredded cheese
1/4 c each diced bell pepper and onion
tabasco or other hot pepper sauce, to taste, optional
Heat oven to 350
Line a 12 c muffin pan with foil baking cups and spray them with Pam
Mix all ingredients together and fill foil cups
Bake @ 350 for 20 min, testing so that knife instered into middle of cup comes out clean
cals: 49 fat: 3 carb: 1.4 fiber: .6 pro: 4.4
I'm thinking one of these and maybe a couple slices of thin sliced bacon (27 cals ea) would make a great breakfast. I see lots of variations here. So I'll let you know!

That sounds wonderful. Wonder how they would freeze and take out and pop in the micro??
Today I called in to work, back is KILLING me, so Ive been drinking coffee, gonna make some breakfast in a bit, and relax today. I really need to clean house but the back says NOOO!!

Dinner-Yet to be determined, Mike is talking homemade chilli!!!
Im sure since its cold and damp, lots of coffee will be added to the mix. I wish they made protein infused coffee that tasted like my Maxwell House brew!!! Maybe I should figure out how to make that, since folks say, "Rhonda dont have a full time job, she can do it!!" Sometimes I think I need a full time job to get some rest, but Im not complaining. I LOVE my substitue job!!

The person who posted this on the site I copied it from says she makes them, freezes them and nukes what she needs. I think it sounds like a wonderful thing for a quick and easy breakfast or snack. I think you could add just about anything like chopped mushrooms, Bac-o's (the soy ones that are fat free), change up the type of cheese, gosh, the possibities!
Sybul has been posting on the Over 50 forum, Steve is fine, just busy, and Ann posted a thread after you posted this. As far as the others that are MIA??? Who knows. Wish they would come back.

Zipping in for a moment to post my slightly better day... I stayed at home AGAIN with the kids. They're really fine, but the schools this year are militant about not keeping anyone with a temp over 99.0 - Little Mama was 99.6 and Big Dog was 99.4. Understandable with the flu scare, but GAH, we're going stir crazy. I'm not even medicating the fever anymore; I tend toward the school of thought where if they don't *feel* bad, I let the temp burn out the germs. Now, with the weather, looks like we'll be cooped up another day, but it might be fun this way!

strawberries, little bit of orange

I can assure you I'm eating! LOL!
I'm just not on every day to post and with my OCD, I'd have to post my intake every day or it would really bother me. If anyone missed a day or I missed a day, I'd have to come back in and post days and days of intake to catch up. I couldn't not post it for a day and then pick up again when everyone else did like normal people could. Because I am not normal that way. I'm an anal weirdo. LOL Missing a day, then picking up again without making up all the missing days would be like nails scraping down a chalk board to me. Weird I know. But true.
So I choose not to post my intake at all. Actually, it's really nothing exciting anyway. I'm a fairly monotonous person. LOL!
I stay between 1640 - 1660 calories per day (because my intake is supposed to total 1650 per day, but I'm usually about 5 calories off one way or the other every day). My fluid intake usually stays between 80 - 100 ounces per day although I had a couple of days a week or so ago where I got down to the 60 - 80 ounce window.
I bought an ice cream maker from Amazon.com and have been experimenting with different ingredients to come up with a good protein ice cream recipe. (I don't do eggface's recipe because she adds solids to most of her protein ice creams and I don't want to have to count it as a meal. I want it to be all liquid. So mine are really more like frozen protein shakes so I can count them as liquids. So far, my favorite is banana fudge protein ice cream. I'm still working on getting it just right though.)
In any event, it's VERY late (actually early morning) so I'm off for now. Just stopping in to say I'm alive and eating well.
