Western Meal In One recipe (from Wendy #1's Mom)
Everyone loved this dish and she let me copy it from her recipe book...Victoria's Recipes for Gastric Bypass Patients. Wendy's Mom's sister gave her this book and I haven't looked for it yet, but the back cover had the following information:

WESTERN MEAL IN ONE
1 pound of extra lean ground beef
1 clove garlic
1/2 cup chopped onion
1/2 cup diced green bell pepper
1 teaspoon of salt
1 teaspoon of chili powder
16 ounce can of kidney beans (drained)
2 1/2 cups of canned tomatoes (diced with juice)
3/4 cup of instant rice (uncooked)
3/4 cup of shredded cheddar cheese
Brown the beef and garlic. Add onion and pepper, and coo****il they're tender. Drain, then combine all ingredients (except the cheese) into one dish. Bake covered for 30 minutes at 350 degrees. Uncover, sprinkle cheese over the top, and bake uncovered for an additional 15 minutes.
