Tasty Ideas for the Soft Diet?

So I'm about to go into my fourth week and I have overeatten a couple of times.  I love food (duh, wouldn't have this problem without it), but with these limitations I've been having a tough time coming up with tasty meals.  I've been going by the dietary sheets I got, but the limited examples quickly got old.  Does anyone have any ideas for me to try?  I could really use some new recipes or something.

Hi there,

sorry it's taken so long for someone to respond. No excuses for making a newbie wait two days for an answer to a question!

First of all, in response to your comment on over eating, you MUST measure your food at this stage. You sure don't want to stretch your new little pouch by putting too much in it. You've made an investment in your health, so make a small investment in some measuring spoons and cups.....please!
You should still be eating about 1-2 tbs of food at a meal!

Now, here's some suggestions (remember, I'm almost 3 years out, so my memory of 4 wks post op is hazy......but then, so is yesterday....LOL)

tuna,egg,  ham or chicken salad, with low fat mayo. Make sure the meat is mushed up really well.

low fatt or fat free refried beans with a tad bit of shredded cheese on top.
Chili or any beans that are cooked fat free. If you make white beans from canned, try adding Baco's (immitation bacon bits) for flavor....no added fat that way. Beans are a terrific source of fiber and protein. Versitile too!

cottage cheese. You can even mix some flavored yogurt into it to up the protein and add flavor.
macaroni and cheese, made from scratch with fat free cheese and skim milk.

If you can find Greek yogurt (some wal-marts carry it, and Kroger has it in the "organic/health food" section" use that with some Splenda and fruit. It's VERY high in protein and thicker than regular yogurt. One carton will last you 3-4 meals. Make sure it's the fat free version, though.

oatmeal or cream of wheat made with skim milk.

Okay, that's about all I have for now. Let's hope some folks can come up with some more for you. And, please, remember to MEASURE!

Minty Cookies + Cream Protein Ice Cream

  • 2 cups Unsweetened Silk Soy Milk
  • 4 scoops Isopure Zero Carb Cookies + Cream Protein Powder
  • 1/4 tsp. peppermint extract
  • Optional - 3 sugar-free creme filled chocolate cookies, crushed
  • Splenda to taste

Mix all ingredients, I use a blender.  Into the ice-cream maker for 25 minutes.  Add the cookie bits in the last five minutes.  Scoop into a container for the freezer and let harden for an hour in the freezer.

Almond Joy Protein Ice Cream

Almond Joy Protein Ice Cream MM Style

Now.  This batch of protein ice cream is a bit more decadent, more DESSERT-ish.  But, it's still way better for you than eating a carb-loaded ACTUAL dessert.  I have some hardening up in the freezer now.

  • 2 cups Silk Unsweetened Soy Milk
  • 4 scoops BSN Lean Dessert Chocolate Coconut Protein Powder
  • 1 ounce Coconut Flavored DaVinci or Torani Sugar Free Syrup
  • 1 bar Low Carb Specialties ChocoPerfection, chopped
  • A few Emerald Cocoa Roasted Almonds, chopped (or plain unsalted)
  • 1 ounces organic unsweetened coconut.
  • Splenda or Truvia (I will start adding this to my recipes from now on) to taste if necessary

I whip it up it all in my blender.  Pour it into the ice cream maker, then into 1 cup Rubbermaid containers for the freezer.

If you don't have ChocoPerfection, you could use super dark (therefore very low sugar) chocolate, or omit it altogether too.

MM's Orange Creamsicle Protein Ice Cream!

  • 2 cups vanilla soy milk, unsweetened soy milk or regular milk  (I used vanilla soy today,  and I LOVED IT.  I will try it with my regular unsweetened soy next time.)
  • 4 scoops Matrix 5.0 Orange Cream Protein 
  • 2 ounces Sugar Free Vanilla Syrup
  • Some orange juice or orange concentrate.  I squeezed half an orange into the machine.
  • Splenda to taste as necessary, will need this if you do not use the vanilla soy milk because that contains sugar.
    • I mixed all ingredients in my blender first, and dumped them all into the ice cream maker.  This was amazing.

I'll show you a photo tomorrow.  I ate some at the soft-serve stage, and the rest is in the freezer hardening up for MY BREAKFAST.

RECIPE & MEAL IDEAS FROM OTHERS


SPANISH BELLPEPPERS
1 Bellpepper
Refried Beans
Shredded Cheese
Salsa
------
Cut Bellpepper in half, sprinkle with water and microwave for 5 minutes.  Add refried beans, shredded cheese and cook another 90 seconds.  
Top with salsa.

HUNGARIAN CABBAGE SOUP
2 lbs cut Cabbage (Ok to use packaged)
2 lbs Ground Turkey
1 large Onion chopped
14 oz can Beef Broth
2 cans Tomato Sauce
1 can Diced Tomatoes
2 cans Water
3/4 cup Uncooked White Rice
1/2 cup Splenda
1/4 cup Lemon Juice
-----
Brown turkey and onion. Add to pot together with remainder of ingredients. Bring to a boil and simmer until rice and cabbage is fully cooked.
Optional: Sprinkle shredded cheese on top.

DELI ROLLUPS
Sliced turkey and cheese rolled around a big lettuce leaf and/or pickle slice. Optional:  Add low cal or FF mayo or mustard.

COTTAGE CHEESE DELIGHT
Add a package of Splenda, sprinkle of Cinnamon and chopped nuts.

CHICKEN/TURKEY/TUNA SALAD
Slice 2 oz Chicken, Turkey or Tuna
Shred 1/2 cup lettuce
Mix with Salsa to make moist
 

COTTAGE CHEESE PANCAKES

1 egg (if you would like more of a crape style add 1-2 more eggs)

1/2 lowfat cottage cheese

1/2 cup quick rolled oats

1 tsp canola oil

Optional: Add a little Cinnamon and vanilla

Put all the ingredients into a blender and mix until smooth.  Lightly oil skillet and place over low heat. When the skillet is hot, spoon the batter onto the skillet and coo****il it starts bubbling and has set up, flip and coo****il golden brown. Makes about 4 pancakes. Serve with sf syrup or sf fruit spread.  Pancakes freeze well.  Each serving has about 23 grams of protein.


COTTAGE CHEESE PANCAKES #2
2 tbsp soy flour
1 tsp sweetener
1/2 cup cottage cheese
2 eggs, beaten
1/2 tsp baking powder
generous pinch of sea salt
1 tsp sunflower oil

Beat together flour, sweetener, cottage cheese, eggs, baking powder, and salt until well mixed, making sure there are no lumps of flour.  Heat large non-stick skillet over medium heat and add the oil. Cook tablespoonfuls of the mixture in batches. When golden underneath, flip pancakes over (they remain slightly runnier on top than standard pancakes). Cook the second side, then remove to a plate and keep warm while you cook another batch.  Top with favorite SF topping. Carbs 5g; Protein 17g; Calories 194; Fiber 2g; Fat 12g 

FAUX ICE CREAM (FROZEN YOGURT)
Scoop yogurt into dixie cups and freeze.  Use Greek Yogurt from Trader Joes (20 grams protein).  

PEANUT BUTTER & OATMEAL PROTEIN BALLS
1-1/2 cup Peanut Butter
2 scoops Unjury Chocolate Protein Powder
1/2 cup low Carb Special K
3 tbsp sugar free Maple Syrup
1/2 cup Oatmeal (used to coat outside protein balls)
3 packets Splenda (or 3 tsp)
Optional: 1/4 cup chopped nuts    
   (Pecans / Walnuts / Almonds)

Mix everything up (except Oatmeal) in a bowl and then roll them up into walnut sized balls and then roll them in Oatmeal.

QUICK & EASY PROTEIN BALLS
1 cup Peanut Butter
1 cup Oatmeal 
1 cup Protein Powder
5 packets of Splenda
-----
Mix all the ingredients together.  Microwave the Peanut Butter for 45 seconds to make it easier to mix.  Roll into walnut-sized balls & store in zip-lock baggies.  Makes about 20 balls.

OATMEAL SURPRISE MUFFINS

1 cup oatmeal

1 cup skim milk

1 cup flour

1 large egg

1/3 cup Splenda

3 tsp baking powder

1/4 tsp salt

1/4 cup oil

1 cup blueberries or 1 large apple

Optional: 1 large mashed banana and/or chopped pecans or almonds

-----

Mix oatmeal with milk. Leave for 10 minutes to soften oatmeal.

Mix the dry ingredients.  Use wire whisk to mix.

Add egg and oil to the oatmeal mixture.  

Lightly fold wet mixture into the dry. 

Add blueberries and fold.  If using apple instead, grate first and use peel 

DO NOT OVERMIX

Spray Pam in muffin tins. 

Makes 6 large muffins or 12 medium cups.

Bake at 400 for 20 to 25 minutes.

NOTE: Muffins do not brown well so don't overbake. 


LENTIL SOUP
1 pound lentils
1 bay leaf
3 large carrots, peeled and sliced
2 stalks celery, chopped
1 large onion, chopped
2 cups crushed tomatoes (fresh or canned)
2 tablespoons extra-virgin olive oil
Salt and pepper to taste
Vinegar (red wine, cider or balsamic, optional)
----- 
1. Pick over lentils to remove any stones, dirt, or other foreign objects. Rinse in cold water and place in a large pot with enough cold water to cover lentils by 6 inches.  Add the bay leaf.
2. Bring to a boil, skim off foam, lower heat, and boil gently, partially covered, until lentils are just tooth-tender, 20-30 minutes.
3. Add carrots, celery, and onion to the lentils. Cook partially covered till carrots are tender, about 20-30 minutes.
4. Add crushed tomatoes, olive oil, and salt and pepper to taste. Simmer, partially covered, until lentils become very creamy and soft. Stir occasionally and add boiling water if necessary to prevent sticking.
5. Remove bay leaf before serving. If you like, stir in a little vinegar just before serving.

Sorry!  I wish I had some good ideas, but I don't! 

I didn't feel like eating at all for the first month or two after my surgery, so I lived off one meal a day that I forced myself to eat (along with protein & lots of skim milk).  (Note:  I am not advocating this, just simply stating what I did.)

So I have no suggestions!  Just sending good vibes your way!  You can do it!!!

During the puree and soft food stages I put EVERYTHING in the magic bullet (I had the much cheaper off brand, but still the same thing, just different brand name). 

Sometimes I still will puree or chop food using it.  I would make some kind of meat stew/soup in the crockpot, then take a little meat and juice and put it through the blender with some seasonings and eat it like pudding or something.  It may sound gross, but it just made it much easier for me to adjust.  My domestic partner doesn't care for stews/soups so after I got out what I would eat for a few days, I would then BBQ the heck out of the meat and put it in the oven for him.  I will still do things like that, like cooking chicken breast in liquid on the stove till it's done, but NOT falling apart, then put his pieces in the oven to finish cooking.  That way my meats are juicy and easy to digest and he still gets his BBQ meat, LOL.

The post-op book has a big list of what all you can and can't have at each stage, how much you should be eating, etc. 

Like Susan suggested, it is important to invest in measuring cups and spoons.  I have a small glass shotglass that has measurements all around it for tsp, tbs, and oz.  I used it constantly, every meal for months.  When mine broke, I cried.  Luckily I found another one for about a dollar at a dicount kitchen store.    Since it's glass its see through and it makes it very easy to accuratly measure any size I need.  

You can also go and check out the RNY message board and also the message board for your surgery month/year to chat with others who are at about the same food stages and you and they will probably have lots of ideas to help you.  Also the main OH board is really really active and you could probably get all kinds of recipes and ideas there to.

Also I forgot to add in my other post that Whole Foods in LR has instant refried beans and instant black beans and other instant beans in their bin section.  I still get these whenever I go to LR.  You just add boiling water and let it sit covered for a few minutes and instant beans, then add whatever you want (taco bell packet, cheese, whatever).  This really helped me out early on, because I could add a little more water to the mix to make it thinner and easier to eat.  And it's full of protein and all natural.

Wow....what a great idea, Evelyn!  I didn't realize that Whole Foods had those dried beans. I'm going to have to check it out next time I'm there. You say they're in the bulk bin section?  Hmmmm, lots of ideas here.

Yeah Susan their not on the end where all the granolas and cereals are, but a bit closer to the corner.  I think their near the Olde World Pilaf, cause I get the pilaf mix as well and my sister likes to to get the 32 bean soup thing. 

I only get to make it to LR a few times a year though :(

My weight is steady and not moving anywhere.  I am staying at what I was in January, which is why I haven't changed it.  I think if I have liposuction on my stomach (where I still have the bulk of my fat/weight still at) that I would probably easily drop 40 more lbs.  I say this because my top half is a size 14 but because of my hanging stomach (and it's not all skin, it is fat) my pant size is 18 sometimes 20.  That's a big difference between top and bottom.  And it's all pretty much my stomach.  I'll take a pic this week and upload it to my profile.
