Monday, Monday! How did your weekend size up????

Hey gang,

Another busy weekend in Higginsland. Lots of stuff to do, places to go, people to see. Work wasn't as rough as expected on Saturday, so I was able to get my proper snacks in, and I kept a bottle of water in my purse at the symphony, so I got in all of my water too!  Sunday was busy with Bellaness, as usual. Tess and I got lots organized and bottles filled. We've started the process to have a booth at Holiday House in the fall. Hope we're not biting off more than we can chew, but we'll see.

Here's my Sunday intake.

latte x 2

Fiber one cereal w/ banana

chicken enchilada casserole

Boca burger on Lite bun  w/ 8 baked fries

Protein drink

Smart pop mini bag popcorn w/ butter

cals: 1418  fat: 39  carbs  193  protein: 97

Hi Susan and everyone else! I finally made it back from Nashville...man it was 70 degrees when we left on Friday but a winter nightmare coming back. We left Nashville at 8:00 Sunday morning and did not get back home until almost 8:00 Sunday night! What was supposed to be about a 5 hour trip ended up taking us 12 hours. There really weren't any wrecks just mostly stalled cars and cars stuck in snow or cars that had slid off the interstate. The traffic was just bottled up and it was pretty much stop and go from Jackson, Tennessee all the way to Memphis. Once we crossed the bridge in Memphis and headed into Arkansas it was smooth sailing. Anyway, other than the trip back, I had a great weekend! Lots of fun and plenty of shopping! Nice little weekend getaway!

Here's my intake:

B- 2oz. deli shaved rotisserie chicken breast and 1 oz. cheddar cheese--made a couple roll-ups

S- Peanut Butter Nature Valley granola bar (about 3/4 of it)

L-leftover roast beef and potaotes and carrots

S-mini bag od popcorn

D- salmon and wild rice (trying the rice again....LOL) and corn

S-probably some pecans or almonds

Ive had all of my vitamins and my calcium and I am working really hard on getting all my fluid in!

Ok....better get back to my little darlings....they are working so well this morning for a Monday! Take care everyone and have a GREAT Monday!

My week got off to an okay start.  I made a big batch of SF peanut butter cookie dough.  (Of course, I weighed it out into 43 equally sized balls and froze all but 6 of them for later.  I left 4 in the fridge thawed and baked 2 tonight for supper snack to make SF peanut butter & jelly sandwich cookies.  THEY WERE OMG GOOD.  I figure y'all will be seeing those on my daily log for a while.)  But enough about that....

OMG YES!

I use Paula Dean's recipe for SF (and FLOURLESS) peanut butter cookies found here:

For the sandwich cookies, I don't use a fork to flatten the cookies out.  I use my fingers to make them flatter (instead of flat w/ "#" ridges on the tops).  I flatten them out until they are a little flatter than a pad of post-it notes would be (big around enough to make a sandwich out of.

Then I bake them for about 8 minutes (not 12 or they are overcooked by my taste and it is EASY to overcook these cookies). 

Then I let them cool and add 1.5 tsp of sugar free strawberry jam on top of one cookie and top it with the 2nd cookie.  (You could use any flavor jelly/jam you wanted and more or less for taste.)

2 batches of Paula's cookie dough mix yields 43 cookies at 16 grams per cookie (if you weigh them out into equal sized balls like I did).  Using 1.5 tsp of SF jam inside them is about right according to MY taste for cookies that size.  But if your cookies are smaller or larger, you would probably adjust that up or down depending on taste. 

OMG THEY ARE GOOD.

Well, hey guys and gals!!!
Sunday was ok, COLD as frick, and I went to the barn w/Mike to see my new horse, and dang his hide, he bought another one!!!! Now we have 3 solid black horses, but thats ok, they seem to be like kids, cant have just one.

Didnt do much yesterday but hug the wood heater and watch the trainer ride my horse.  He loves her and rides her almost every day.  I was gonna take her home the other day, and he asked me not to, he said, "dont do that, then I wont have a Cadillac to ride!!!" so she is still there.  Gonna try to ride her tomorrow or Wednesday, if it ever warms up.

Feel better today, didnt call the doc, if tomorrow is as good as today was, I'll feel like Im on the mend.

Food for Sunday was as follows:
Wake up-Coffee
Breakfast-Cereal and soy milk (kellogs smart start sprinkled w/protein powder)
Snack-Handful of roasted/salted in shell peanuts
Lunch-Fat free turkey hot dog on whole wheat bun
Snack-More peanuts
Dinner-4 bites speckled butter beans, 3 bites of lean roast beef and a stalk of celery!!!
Lots of tea and coffee, It was COLD!!!!
