Blueberry Protein Muffins/Cookies

Happy Holidays!!!  Here is a recipe I tried today.  (I made the protein muffins using blueberry protein powder instead of vanilla protein powder.  They were DELICIOUS!!!)

Blueberry Protein Muffins/Cookies

 

4 egg whites

1 cup blueberries

1 tsp vanilla

½ cup oats

1 tbsp cornstarch

½ cup Splenda

2 scoops vanilla protein powder (or flavor of your choice)

 

Combine all ingredients until blended well.

Mix in blueberries and drop by the spoonful onto a greased cookie sheet (or into muffin holders).

Bake at 375 degrees for thirteen minutes.

Makes 12 cookies (or 12 cupcakes).

Each cupcake has approximately:
59.36 calories
.23 g fat (only 3.49 % calories from fat)
10.59 g carbs (The blueberries or whatever fruit you use will cause the carbs to be high on this, etc.  I could have lowered the carb count by using a zero carb protein powder... I just didn't have one on hand.  The nutrition facts below are based on 7 to-go packets of Biggest Loser Blue Blueberry Protein Powder because that's what I had on hand.)
5.28 g protein

These are not big bulky muffins either.  They are small sized (though not mini-muffins) that are FULL of flavor.  OMG are they full of flavor!  

DEFINATELY easy and DEFINATELY worth a try!

GNC stores sell it in the on-the-go packets.  (The come in a box with a packet of 8 on-the-go packets that look like giant crystal light envelopes.)

(They also sell a Biggest Loser Red Raspberry flavor.)



The GNC website sells it by the tub too (in both flavors in addition to chocolate & vanilla).
