Happy Hump-Day to All,

How is everybody doing?  Hope your journey is smooth today.  Looks like the rain is behind us for a while, so let's all enjoy a little sunshine today.   I'll have to enjoy my sunshine through the office window today. 

I got together with an old friend and former co-worker last night.  Hadn't seen him in several months.  He has lost 95 pounds this year through diet and exercise.  The two of us certainly didn't take up nearly as much room as we did a year ago.  It was good to see his progress.

Looking forward to meeting some of you tomorrow at the LR support group meeting.

I'm less than 2 lbs away from one-derland!!!!!!!!!!!  I am so stinkin' excited today!  Even my sucky job can't bring me down too much, ha ha!  Now if I can only get my butt in gear with some exercise.

Yesterday, I experimented with a few recipes from one of the WLS cookbooks I found at the library.  My family was less than impressed with the celery root faux-tatoes I made.  I wasn't too thrilled with them, either.  Oh well.  I'll try something more "normal" tonight. :-)

Yesterday:

Breakfast:
string cheese, 1 grape
protein water

Lunch:
a little tuna salad on 1/2 small croissant (didn't stay down, I guess tuna's still off the list)
a few fried pickle chips (also didn't stay down)
1 piece sf candy

Dinner:
Turkey cutlets - meh
Celeriac puree (low-carb mashed "potatoes") - bleh
roasted asparagus - okay

Snack:
small salad w/ranch dressing

Try mashed cauliflower for your potato fix. When i used to lowcarb, the man ate these many times before he decided he had enough. Boil them until they are about to fall apart and then add "stuff" to make them mashed potatoes. I used to add some FF sour cream, FF chive cream cheese and some shredded cheese to make it "sticky". I have also added bacon bits to them before. You could definitely make some loaded baked potato salad this way.

That's a better idea...look up a recipe for loaded baked potato salad and substitute cauliflower for the potatoes and then make the other ingredients weight loss friendly.

My Wednesday was pretty decent.  Actually... no that's a lie - it wasn't decent.  It was extremely stressful.  But other than the stress, it was okay.  I had a VERY stressful day which I will probably blog about later - but I don't have the energy or the time right now.  So we'll talk about that later.
