Homemade RNY Honey Mustard Pizza
I'll tell you ahead of time that this was not really spicy enough for me, so I'm going to alter the recipe a bit to include 2 % pepperjack cheese in leu of one of the others.
I'll also warn you ahead of time (for those of you that are sensitive to sugar) that it contains 1 teaspoon of honey, which contains about 5.33 grams of sugar (not a lot, but still).
You will need:
1 tbsp 2 % cheddar cheese (I used generic Kroger brand shredded.)
1 tbsp 2 % mozzarella cheese (I used generic Kroger brand shredded.)
1 tsp honey (I used generic Kroger brand.)
1 & 1/2 tsps mustard (I used generic Kroger brand.)
1/4 multi-grain tortilla (I used Tumaro's Multi-grain Low Car 94 % fat free.)
1 ounce cooked chicken (I just browned it in a skillet with some generic Kroger cooking spray.)
1. In a skillet, brown some chicken in cooking spray. Measure out 1 ounce of the COOKED chicken. One ounce of COOKED (do not measure out an ounce when raw) is all you will need. You can use canned chicken for this step instead of cooking your own.
2. In small bowl or measuring cup, mix 1 teaspoon honey with 1 & 1/2 teaspoons mustard until they are well mixed. (This is your honey mustard sauce.)
3. Pour 1 ounce of cooked chicken into the honey mustard sauce and stir it up.
4. Baked (or pan brown) 1/4 multi-grain tortilla until it is a little crispy.
5. Pour honey mustard chicken mix onto crispy tortilla.
6. Top with 1 tablespoon 2% mozzarella & 1 tablespoon 2% cheddar cheeses.
7. Bake or pan warm until cheese is melted.

OOOOOHHHHH I can see this in my future, but I might add some pineapple chunks to it. Love pineapple when it's heated.
Maybe a few red pepper flakes to the sauce? That will kick up the heat w/o adding any flavor.

I'm making my famous non fried refried beans today for Father's Day dinner. Tacos made with soy crumbles(vegetarian kids, remember) beans and rice. DH's request. Should be enough beans left over for many bean and cheese burritos for the week.

We're having sliced strawberries and pineapple over FF SF frozen yogurt for desert tonight.
There is a new Fig Newton thingy out. Newton Fruit Crisps. 100 cals per pkg of two. They come in apple or berry. They're not like a traditional fig newton, the crust is crunchy, baked, not fried. I don't know about the sugar grams, not a dumper so I look at the label but don't store it in the ol' memory bank like some things.
