HI Gang, Here's a copy of a new recipe I tried today. It's really easy, cheap and best of all, yummy!  Could be great for newbies going onto solid food as the chicken is very tender. Crock Pot Saucy Italian Chicken Thighs 3 lbs skinless chicken things (breasts will work too, but thighs are more moist) 1 (14 oz) can Italian style diced tomatoes, undrained 1 (6oz) can tomato paste 1 med onion, chopped 1 med bell pepper,  in large chunks 1 TBS minced garlic (I used the jar stuff) 1 Tbs dried Italian seasoning 1/4 tsp each salt and pepper Place chicken in crock pot. In separate bowl, mix the rest of the ingredients together. Pour over the chicken, cook on low for 8 -9 hours  (mine went 11 'cause of work)

That sounds fantastic.  I'm keeping that one to try too.  (I usually have to alter most recipes to take the onion out.  I'm allergic to onion.  I can handle a little bit fine - but too much gives me rashes.)  This one has garlic though WHICH I LOVE.  Garlic is one of those things I don't think a person can ever have too much of!  LOL

Karen, it is so good I can't wait to have it for dinner before leaving for support group.  It would be great for a weekend visit...just throw everything in the ol' crock pot and chat the day away. Dinner is ready with no fuss. I'll go back and edit it to show the nutritional info. have fun this weekend.
