Crock pot salsa chicken
Here's another recipe that's great for us that are at the soft food stage and beyond. The chicken is very tender and moist, lots of flavor too.
4 chicken breasts
2- 16 oz jars of salsa===any kind, mild, med or hot, your choice
1 can corn, drained (optional for those newbies)
1 can black beans, drained
Throw everything into the crock pot, let cook for 6-8 hours on low. Take out chicken, shred with two forks and put back into the pot for about 30 minutes. The shredded meat soaks up the liquid and makes it very moist.

Thanks Susan! I've been looking for something different to do with chicken, this sounds great. What do you eat with it, or do you just eat it by itself? I'm thinking some brown or wild rice would be nice...Uncle Ben's has a great whole grain brown & wild rice medley, just pop it in the microwave for 90 seconds and its done.
I really like the Carb Balance tortillas. Either the whole wheat or the white are good. Not like the ones made with lard, but you can't call me "lard butt" anymore, right?
Gosh, I usually just heat it up with a spoonful of lite sour cream, or maybe a sprinkle of 2% shredded cheese. Over rice would be great too. It's really a versatile little number!
