Better than Taco Bell's beans recipe
Since I've seen so many folks here eating Taco Bell's pintos and cheese I decided to share my VERY authentic refried bean recipe, modified to make it fat free. I'm from San Diego, married to a man who is half Mexican, so believe me, this is the real deal.
This makes a lot, so half the recipe if you want
4 cans pinto beans, two drained, two with juice
1/4 cup minced onion
1 TBS minced garlic
UP TO one cup of chicken broth
Salt and pepper to taste
Spray deep skillet with Pam and cook onions until clear. Add garlic and stir a bit, don't let it brown. Add all the beans (remember, two drained, two not drained), stir well and bring to a boil. Reduce heat to simmer and allow to cook for about 1 hour uncovered. As the liquid cooks off, add chicken broth a little at a time so the beans don't dry out. After about an hour, using the back of a spoon, mash most of the beans. Add salt and pepper to taste and enjoy. Sprinkle a little cheese on top....Yummo!
