Ziplock Omelets (from RNY board)

Ok, I made a camping/eating post on the RNY board too, and I got this wonderful idea from jandell that I thought I would share it here since I just thought it was so cool.  I am going to try this for breakfast tomorrow morning. Ziplock Omelets ~~~~~~~~~~~~~

Ingredients

Eggs, zip lock bag, pot of boiling water, and anything you want to put in an omelet, such as cheese, ham, sausage, onion, bell peppers, etc. Use two eggs per person (3 if they are really hungry).

Directions

Scramble eggs in a small bowl, or, in a blender with a touch of water (not milk) and blend until frothy. Pour into a zip lock bag, add any other ingredients. Push out most of the air from the bag (very important) and zip it closed. You can freeze after this step, so easy to make ahead for camping.

Holding the top of the bag, drop it into water that is boiling . Check the clock and let them cook for exactly 13 minutes; no more, no less.

In the meantime, gather sliced tomatoes, fruit etc. to go with the omelet. At the end of 13 minutes, take the bag from the water (I usually pat the bag dry with a towel), handle carefully since it will be very hot. Unzip the bag and turn it upside down above the plate and shake gently until the egg falls onto the plate. Hooray! A perfect omelet and no one will guess that you made it in a "zip"! Happy eating!

Hey Evelyn, Let us know how this goes. I saw it a long time ago on the main board and even told my SIL about it since she has four kids to feed before school. The only thing that concerns me is the integrity of the zip lock bag. I think I'd use a sturdy one like a freezer zip lock. Great picture!!!!

Wow! Thanks for the idea. I have four kids and getting them fed quickly in the morning isn't always easy, so this helps so much!  Karen

I went camping this weekend and made them both mornings for breakfast and they came out really good.  I was able to digest the egg cooked this way so much better than scrambled.  The only problem we had is that the bottom or side of each ziploc bag seemed to come open right as the egg was done.  Maybe I didn't get enough of the air out or something.  Anyhow, these were really good and I plan on making them at home often.
