Recipe for Alabama Cornbread Cake - Delicious!!

Alabama Cornbread Cake

1 cup sugar or 1/2 cup Splenda sugar substitute, for baking 1 cup brown sugar or 1/2 cup Splenda brown sugar blend 4 eggs, beaten 1 cup vegetable oil 1 1/2 cups self-rising flour 1 teaspoon vanilla  2 cups pecans, chopped very fine
Preheat oven to 350 degrees; lightly grease and flour a 9x13-inch baking dish.
Stir together sugar, brown sugar, eggs and oil in a medium bowl until smooth. Stir in flour and vanilla; add pecans and stir until evenly mixed. Spoon into prepared pan and bake for 30 to 35 minutes.

This recipe is really good and is great with coffee.

This sounds really good, but wondering why it doens't have cornmeal in it?  I make my cornbread with equal self-rising flour to the same amount of buttermilk cornmeal mix.  I also add a little bit of splenda.  Not enough to make it sweet, but it gives is a nice flavor.  I also use 2-3 eggs.  I have finally perfected my CORNBREAD.  It's taken years, but my family loves MY cornbread like no one elses.  I think it's funny, cause I can't fry chicken.  My fried chicken just tastes BLAH!!!!!  I know, it sounds crazy, but I CANNOT fry chicken no matter how hard I try.  I've tried everything.  I just can't do it.  So, we either get it broiled, baked, boiled or grilled.  Sad, I know, but it is just somethingI cannot do.  I'm not the worlds greatest at frying eggs either.  I would much rather scramble them, those are hard to mess up, but believe me, it's happened to me too.  It took awhile for me to perfect that too.  I try my best to fry eggs ever so often when I do happen to cook breakfast, which is not too often  I think I will try this cornbread cake and see how it turns out.  Thanks for sharing the recipe.  I love simple and easy recipes, the less ingredients and the easier the better for me.  I hope you have a wonderfrul Christmas.

It actually does not have any cornmeal in it.  My grandmother said it is called cornbread cake because the pecans give it the texture of cornbread.  I love this stuff!  It reminds me of banana bread without the bananas, but oh so much better!!  My grandmother also makes prune bread and strawberry bread.  They taste really good too!  She is 94 and has all kinds of wonderful recipes.  We all call her Mama Jewel.  She is what God intended a mother to be.  I love her with all my heart.

My aunt has a recipe thats called Georgia Cornbread Cake and it doesnt have cornmeal in it. Im sure its pretty close to this same recipe and ELLE you DO NOT know/need the cornmeal. its AWESOME. it does remind of a banana bread kind of.

I have found the same recipe on-line, and it is called Georgia Cornbread Cake.  I took the liberty of changing the name because my grandmother, Mama Jewel, gave the recipe to me.  :O)

I wish I had some this morning, but I am out of pecans.
