MONDAY RECIPE

Scalloped Tomato ..THIS IS WONDERFUL if you like tomatoes and things that are semi Italian 

16   Plum tomatoes or the Calliente ones on the vine ,,( has to be a good tomato)   ABOUT 2 1/2 lbs of tomatoes

1/2 loaf WHEAT French Bread cut in one inch cubes ( BE SURE TO USE FRENCH BREAD ) 
olive oil  ,  Fresh Basil if you have it  about a half  cup chopped  ( IF NOT I USE ABOUT 3 tablespoons sweet basil from jar)    garlic powder   1 tsp or to taste
1 cup Parmesan cheese , tsp salt and pepper ,  3 packs Splenda

3 tablespoons olive oil in large deep frying pan    toss in the cubed bread and cook about 5 min or until toasted light brown
cube the tomatoes and add in to the browned bread c cubes   add the basil , 3 packages Splenda , salt pepper and garlic  cook for 5 minutes
Pam spray a 9 x 9 or so pan that will hold all this
Top with Cheese and drizzle olive oil on top of this
Bake at 350 for 30  min   MAKE SURE OVEN IS PREHEATED AT 350 .before you add in the dish

THIS heats well BUT ONLY IN THE OVEN  as it needs to remain crispy to be delish .. Microwave will make it soggy ....LOVE THIS DISH but then I love tomatoes anything ...
I KNOW I KNOW lol  not a Christmas one but wanted to share this one .

Randall and Karla ,,,,you both will be surprised at how good it is ,,,, I LOVE IT and not bad in fat and or calories ..
