KAY LOGAN'S BRUNSWICK STEW
1 lb. ground beef browned and drained
1 cup chopped onion
1 can castleberry pork or beef bbq
1 lg. can white chunk chicken drained and shredded
1 can tomato sauce
1 can diced tomatoes
1 can cream style corn
Mix all ingredients together and simmer until flavors are well blended. Notes: I have picked up a lb. of bbq pork and a lb. of smoked chicken from the bbq place and used that and it is really good in this stew. You can also chop up potatoes in this stew and that's really good too! You can use any combination of meat you want.

I added veggies to mine as well. I added frozen whole kernal corn, fresh okra, frozen lima beans, diced potatoes. I couldn't find the canned bbq pork, so I used Curly's BBQ Chicken in a tub that Publix had BOGO this past week and I had some boston butt cooked and left over in the freezer and I also put in a bottle of V-8 to get added veggies, vitamins and minerals. It was SOOOO YummY!!! I got to going and just got carried away with it but it turned out terrific. Everyone LOVED it. We will be eating on it all week. LOL And, I can't wait to make it again.
