KAY LOGAN'S BRUNSWICK STEW

1 lb. ground beef browned and drained
1 cup chopped onion
1 can castleberry pork or beef bbq
1 lg. can white chunk chicken drained and shredded
1 can tomato sauce
1 can diced tomatoes
1 can cream style corn

Mix all ingredients together and simmer until flavors are well blended. Notes: I have picked up a lb. of bbq pork and a lb. of smoked chicken from the bbq place and used that and it is really good in this stew. You can also chop up potatoes in this stew and that's really good too! You can use any combination of meat you want.

I have this same receipe.  Its good.  The stores around here dont carry the Castleberry pork and beef bbq anymore.  Where do you find yours at?

Well, Castleberry's was pulled off the shelves for a time due to a recall.  But Kroger is carrying it again.  Experimenting with other meats was a result of not being able to get Castleberry's.  Shredded pot roast works well in this stew too.

I used Curly's BBQ chicken in a tub that they had buy one get one free at Publix this week.  and then I used some boston butt I had left over in the freezer too.  and,...a can of chicken breast.

I'm so glad you posted this here Loretta.  This stew is loaded with protein and it's about to be stew season.  Also wanted to add that if you like a spicier stew, you can put a can of Rotel in this as well.

I added veggies to mine as well.  I added frozen whole kernal corn, fresh okra, frozen lima beans, diced potatoes.  I couldn't find the canned bbq pork, so I used Curly's BBQ Chicken in a tub that Publix had BOGO this past week and I had some boston butt cooked and left over in the freezer and I also put in a bottle of V-8 to get added veggies, vitamins and minerals.  It was SOOOO YummY!!!  I got to going and just got carried away with it but it turned out terrific.  Everyone LOVED it.  We will be eating on it all week.  LOL  And, I can't wait to make it again.  Next on the list it homemade Vegetable Soup, then I will have a mixed bean Chili......
