Salsa Recipe

Does anyone have a good, quick and easy salsa recipe???  I sure would love to get one if you will share with me.  I had a really good one years ago and lost it.  Thanks.

Hey Carmen.  I make mine with onions, tomatoes, peppers (mild for me) and put it in the food processor.  I also like to squeeze fresh lime juice in mine.  Especially if the peppers are hot.

Now Randall...you know me...I gotta know exactly how much LOL.  Is it one tomato, pepper and onion?  Also, do you put celantro in yours?  Love you too!!!!

I haven't tried this but in the  recipe book I got it from everything I have made is good!! I decided today to try and make some salsa after I tried some at the farmers market that was $10 a jar. Let me know how it works out if you try it. I will be doing Zucchinin bread this weekend so I am not sure when I will get to make it.

1 large spanish onion
2 large tomatoes, cut into halves
1 large jalapeno chili chopped(not sure if I am going to use a whole one!)
juice of 1 lime
1/4 cup olive oil
1 Tbsp kosher salt
1 bunch of cilantro(chopped)

Combine the onion,tomatoes,jalapeno chile,lime juice,olive oil,and kosher salt in a cast iron skillet ot r heavy baking dish. Roast at 350* for 10 minutes. Remove from oven to cool. Pulse the tomatoe mixture and cilantro in a blender to create a chunky consistency. Pour into bowl and chill,covered in the refrigerator.
