Baked Oatmeal Recipe

Baked Oatmeal

1 1/2 c Oatmeal (regular or quick cook, I use quick cook)
1 egg
1/4 c butter, softened
1 cup FF Milk
1/3 cup splenda (or sugar)
1 tsp vanilla
cinnamon, to taste
1 - 2 TBSP Molasses (you may omit the molasses, adding more splenda or sugar)
1/2 tsp salt
1 tsp baking powder
1 ripe banana, diced, opt
a few chopped pecans (1/4 or less, I use less), opt

Preheat oven to 350 degrees. Spray a glass 9X9 baking dish w/cooking spray. In a medium size bowl, beat egg, to egg add remaining ingredients EXCEPT banana and pecans. Mix well, fold diced banana into mixture. Pour mixture into baking dish and top with chopped pecans. Place in oven and bake for 15 -20 minutes or until done (middle will set). Do not over cook! Remove from oven and enjoy.

Diced tart apple is also very good in place of the banana.

You may also wish to add a splash of milk to your bowl while oatmeal is hot (Makes it easier for my little pouch first thing in the a.m.).

This is also good sliced and served cold.

Thanks for posting this. I do love oatmeal, but I'm the instant serve pack kind of oatmeal girl. But only due to time constraints.

This sounds like something I'm definitely going to try on my days off next week.

It is a fast recipe and only takes a few minutes to cook. It warms up well also!
