Wednesday Coffee Talk and Recipe

Good Wednesday morning everyone!  Sure did miss you all yesterday!  I appreciate you thinking about me.  The myelogram?  Well, lets just say that Randall will not have one again!  SHESH!  Today is going to be a better day.  I just KNOW it!  Not only for me, but for you as well. 

Our challenge for today is to just breathe.  We all get to the point that we feel overwhelmed by things in life.  Work, stress, bills, kids, education, many things make us feel like we can't take anymore.  If you will just take a few steps back, mentally AND physically and look at the picture as a whole, it will give you a minute to breathe and to look at things in a whole new light.  Things aren't worth the "smothering" that life brings.  Life can take the life out of you if you let it.  You are stronger than that.  Just breathe!  I know you can do it!  I have faith in YOU!

So, who's up?  What cha sippin' on this morning?  Me?  I'm enjoying some Folgers this morning and I have made a Cappuccino cake also, so I had a piece of it for b'fast.  I have Lucy some ready to grab as she heads out the door for work this a.m.  I've included the recipe to it because Elle had asked for it.  Feel free to make it and enjoy it.  I used Splenda so it isn't that bad.  HA!  Sure is good with coffee too!

Randall's Cappuccino Cake
3 cups of sifted flour
6 eggs 4 ounces of cream cheese 3 cups of splenda for baking 2 squares unsweetened chocolate bars 2 cups of 2% milk 1 cup of oil 2 cups of cappuccino mix (I use the kind you put in coffee from International Foods but S/F) 4 ounces of sour cream   Preheat oven to 350*.  Sift dry ingredients into large mixing bowl.  Add eggs one at a time mixing well.  Add oil, cream cheese, sour cream, oil, and milk.  Melt chocolate in microwave just until soft enough to mix.  Mix all together well.  Spray bundt pan LIBERALLY with non stick cooking spray.  Pour batter into pan and bake for 50 minutes.  LET COOL COMPLETELY!!  Turn out of pan and flip.  Eat and enjoy

Gooooooooooood Morning. Isn't it a beautiful day. I'm sipping(oh so daintily) okay, okay. I'm slurpping some JAMICA ME CRAZY coffee. Getting ready to leave for work (more like play) I am on a kick where I don't sleep but about 3 hours a day. You would thinnk I would use the other 21 hours to clean my house but so far I can't seem to get into that.
Randall it was nice of you to post the recipe for Elle. You know you don't have to post it for me. I live close enough I can smell it baking and just show up at your door. A lot of recipes can be modified for Splenda. One thing that helps is always use i/3 cup of powdered milk per cup of Splenda. That gives it a better texture. I love your cakes. That is not a hint for you to invite me over for a slice of cake. I don't need an invitation. That is one of the drawbacks of living close to me. I just show up at your door.
I'm glad you are feeling better today. I'm also happy that you've got such caring doctor who are determined to find out exactly what your roblems are and what can be done to ease your pain. Take care and I'll see you soon. Love, Aunt Mary

Good morning my dear friend!!!!  I am thrilled that you came through the procedure ok.  I know it was bad.  I have had several and I think that they were the most unpleasant things I have ever had done.  I am gonna have to make this cake.  I have been saying I was going to, but I am.  You have an awesome day today.  I love y'all so much!!!!

Good morning Randall,

Your challenge is right on the nose for me.  It sounds like  you have been looking in the window on my life.  That is exactly how to describe what I have been feeling,   Smothered...life has been smothering the life out of me!!! WOW!!!  Thank you...I did stop and breathe and take a few steps back mentally...and let myself breathe again...I forget to stop and breath when life gets going so fast so thank you for the reminder. 

I remember when we used to have prayer with scripture at the church I used to go to and the person leading it would start it off by telling us to close our eyes, relax and breathe deeply...to breathe in the Holy Spirit...to allow the Holy Spirit to refresh us and to guide us in prayer as we would listen to the Scripture.  It is the most awesome way to start a prayer or a Scripture Study.  It is the most awesome way to take a deep breath whenever you need one.  Just allow the Holy Spirit to refresh you with each breath!!  Didn't mean to get preachy, but you reminded me of that so thank you for the much needed reminder to breathe which reminded me to allow the Holy Spirit to lead me!

Love you and your beautiful family.  Please share my love with them.  I'm so sorry you're having to withstand all these tests...I know they are painful so I hope the doctors can figure out what is wrong soon.  I'm praying for you.

Hello all,
I still have some of this cake in my freezer.I gave this to my friend and she made it for me for my birthday.My hubby love every bite so I cut me a big peice just so I could have some later.So now today is that day.
