Need SIMPLE dinner suggestions
I've not checked the board all morning, so it may be too late for this buttttt.... my favorite 'go to' easy meal is - two frozen breasts in the crockpot, pour some salsa or picante' sauce or a can of Rotel (whichever I have) over it, and let it cook to pieces!! A jar of queso dip is all you need to build your own nachos or make a salad.
I've tried that and love it but my family does not. Why oh why are they so difficult. I wound up cooking some hamburger helper Chili Mac while Christian was napping......also fixed some green beans and mashed taters. It'll have to do. I think I'm going to find something to do with some chicken breasts tomorrow, then Manwiches on Thursday. I will have to see what else I can come up with for the crock pot and that chicken breast. Maybe chicken and rice or something.????
Well, here are a few things we do around here~ just ideas for later on, if this will help you:
Crock Pot BBQ Chicken:
Use Legs/Thighs/Breast, 1/2 chopped onion and favorite BBQ Sauce and place on low heat for @ 4-5 hours.
Crock Pot BBQ Pork Chops:
Use Pork Chops, 1/2 chopped onion and favorite BBQ Sauce and place on low heat for @ 4 hours.
I have no name for this~ I guess Easy Chicken?:
Take Boneless, Skinless Chicken Breast and wrap it with one slice of bacon, thin ham and your favorite cheese and place it in crock pot. Put diced fresh mushrooms and cream of chicken soup on top of breast and cook on low heat for @ 5 hours. (I have substituted cream of mushroom soup and it came out fine.) It makes a gravy to serve with rice or a starch.
Slow Cooked BBQ Ribs in the Oven:
(Loretta, I know you don't eat much pork, but I thought I would include the pork for your family!)
Take a rack of your favorite cut of pork ribs, we usually use baby back, but it can be country style, or whatever...and season them how you want them with dry seasons, garlic powder, rubs, etc. Place them in a pan that is at least 4 inches deep. Put 1/2 cup water with 1/4 cup of vinegar in the bottom of the pan. Put foil over the entire pan of ribs, leaving nothing uncovered. Place in a preheated 300 degree F oven for 3 hours. After the 3rd hour, remove the pan from the oven and remove the foil. Place your favorite BBQ Sauce on the ribs and return ribs back into the oven and increase the heat to 375 degrees F for 15 min. You may leave the BBQ sauce off of the ribs, but if you do, allow the ribs at least 10-20 minutes time to rest before serving.
When the rack with the BBQ Sauce is done, remove from the oven and allow 10-20 minutes to rest before serving.
Homestyle Hamburger Steak:
Take ground beef and add sauteed onions/green peppers with favorite seasonings. You can cook an entire pan of these in the oven at once. I make gravy to go with it.
The reason I sautee the onion/peppers before I put it into the raw meat is because the onions are typically so strong.
Meatloaf can be a winner...if your family will eat it.
You can actually mix it up in the pan BEFORE Christian gets there and have it ready to pop in the oven.
Fish is extremely easy to prepare if you have it on hand and if your family likes it BAKED.
Tilapia, as you know, is a mild fish and only takes a few minutes in the oven to bake.
Not only is it an easy meal, but you are getting your Omega 3 Fatty Acids that are so good for you too!
A Taco Salad is always a hit at my house!
I go all out...Lettuce, Tomato, Diced Green Onion, Sliced Avacado, Salsa, Cheese, Sour Cream, Refried BLACK Beans (which are better for you), Taco Meat, Chips, sometimes I use mexican corn as a topper too.
One of Tim's favorites is for me to take Smoked Sausage and to cut it up into a pot of Fresh Cabbage and to cook the 2 together. He LOVES this. I use Beef Sausage. I usually prepare Great Northern Beans with it. The flavor of the sausage is really good with the cabbage!
What about eating lighter at Supper? Especially now that it is Summertime...
Making Cold Plates out of Ham Salad, Chicken Salad, Egg Salad, Tuna Salad, Pasta Salad, Broccoli Salad, Deviled Eggs, Cheese Cubes, Pimento Cheese, Gelatin Fruit Salads, Stuffed Celery, Muffins, Yogurt Pie.
