Brr.. is COLD! What's for LUNCH?

It's COLD and RAINY here in Tuscaloosa.  Brrrr...... Sitting here enjoying a nice hot cup of coffee.  Got some cheese toast in the oven.  I've also got a chicken casserole in the oven for after church and green beans and potatoes on cooking. I do have some leftover potato salad if anyone wants that and of course I've got lots of pickled eggs. YUM!  Not sure what else I'm going to find to go with everything.  I guess I need to either make biscuits or cornbread.  Not sure which yet.

We are bringing Jimmy's aunt out of the nursing home today so I am making all her favorites.  Steak and gravy, rice, peas and butter beans, squash, cream corn, dressing, dumplings and corn bread.  Watermelon for dessert.  Aunt Rosa Lee is 85 and still a card!!  There is no way she will eat much but I want her to have what she likes today.

Do you make your own pickled eggs?

I wanna come to YOUR HOUSE!  Yummmmm, all of my favorites too.

Yes, I make my own pickled eggs.  It's Kyle's Mom's recipe, using  canned  beets, vinegar and sugar (I use splenda)  I made some a few weeks ago and they were just about gone, so I added a dozen more eggs last night.  They are so good and everyone here loves them.

You need to share Momma Felt's recipe.  I bet that is a low calorie snack that is full or protein.

I sure do wish we lived closer. We would have a grand 'ol time.  There really isn't a recipe , just a little this and that actually.  LOL  That's what my MIL says.  In the past, I've used pickled beets and added vinegar and sugar, but this time I just used canned beet slices, vinegar and splenda.  Yes, it's a great snack and packed full of protein and such a good flavor too.  I just took the vinegar and splenda and heated up in the microwave enough to mix real well and just enough for a good tangy taste, then I added the beets. I used two cans and of course you use the juice too.  I didn't have a large jar, so I use a big plastic tea pitcher with a secure lid.  I just place all the ingredients in there and add eggs.  If you need more juice, just add more splenda and vinegar.
