Hi Carmen. I'm glad you liked the salads. Yes I did do them. So easy. The fruit salad was whatever fruits you like (I used strawberries, cantelope, honeydew, fresh pineapple and grapes) and 2 containers of low-carb strawberry yogurt. I wanted to use some blueberries too, but good gracious! They were way too expensive.
The chicken salad was one rotisserie chicken with skin removed and off the bone, shredded (I don't use very much of the dark meat--you can omit it all together), 1/4 cup chopped onion, 1/2 cup chopped celery, 1 cup grapes sliced in half, reduced fat mayo (just add gradually--I don't measure). Mix together and enjoy!

Pumpkin Muffins
1 box spice or carrot cake mix (sometimes you can find low sugar)
1 can of pumpkin
1 teaspoon cinnamon (I use pumpkin spice seasoning)
1/2 cup of water
dried cranberriesor nuts-optional
Mix and put in greased muffin tin. Bake 250 for 30-45 minutes
These are moist with no oil or eggs--2 points
