"Peach Cornbread?"
So--I admit it. I am a cornbread addict. I don't make it often, but I love it. One of my favorites is fresh hot cornbread right out of the oven with some
"Raggedy" canned peaches on it. Almost like having a
Peach Cobbler, but not as sweet and much better to me.
So, I saw a recipe recently for "Peach Cornbread" that included chopped up peaches and pecans. It called for the Jiffy Mix type of cornbread and I don't care for Jiffy Mix as it tends to have a sweet taste to it--so I decided to take my basic cornbread recipe---the one on the Corn Meal Mix Bag and then I just chopped up about 3/4 cup of pecans and about a cup of peachs and added them to the batter before cooking.
It is in the oven right now. I just hope it taste as good as it smells. YUMMY! I will let you know alter.

The cornbread was very good--or so I think! It is not a sweet tast at all--just enough peach and pecan to flavor it, but not overwhelming. I can see me warming it in the microwave and having a slice for breakfast.
Maybe a little sliver of butter on it!
I had never thought about add ins to cornbread--other than the obvious cracklin bread that my mother makes from time to time, but after seeing this recipe, my mind is wandering!
