Pinto Bean Casserole
1 lb lean ground beef
1 medium sweet onion, chopped
1 can pinto beans, drained
1 can Ro-tel tomoatoes (regular or mild, depends on your taste)
3 - 4 TBSP Salsa, hot or mild
1 cup shredded cheddar ( 1/2 c works just as well)
1 can 98% FF Cream od mushroom soup
salt & pepper to taste
1 package Mexican Cornbread mix
***The recipe did not call for this but I added 1/2 tsp cumin to give it a little spice.
Preheat oven to 350 degrees. Spray a 9 X 13 dish with cooking spray.
Brown beef and onions, draining well. To beef, add beans, salsa, ro-tel, and mushroom soup. Pour into baking dish. Mix cornbread according to directions on package, pour over beef mixture. Bake at 350 until bread topping is done. Remove from over and sprinkle with shredded cheese at once. Allow to rest on counter for about 10 minutes prior to serving. This allows the cheese to melt and the bottom layer to thicken a bit.
When serving, I tossed a couple of sliced jalepeno peppers on top. I also think it would be good with a small dab of sour cream on top, but we were out.
