Here is that recipe.
1 can of black beans, drained and rinsed
2 cups of arborio rice ( risotto)
2 cups cix stock
1 can unsweetened coconut milk
1 onion, chopped
2 TBL. garlic
Cook the risotto in chix stock til nearly done ( most of the liquid is absorbed)
While that is cooking saute the onion and garlic in a bit of olive oil.
Add the coconut milk to the risotto and let it absorb ( cook down on low heat)
Add the onions, garlic and black beans. Most of the liquid should be absorbed.
Seaon with saly, pepper and tsp red pepper flakes.
When serving top with a bit of flaked coconut. The little sweetness offset the spiciness of the red pepper flakes.
