Crock Pot Black Bean Chicken Recipe
*3 Boneless, skinless chicken breasts, frozen
*About 3/4 cup of black beans, more or less depending on your taste***
*Half a packet of taco seasoning
*One can of diced tomatoes with green chilies (RoTel tomatoes work great.)
Feeds 4-5 people, or 2 people and plenty for leftovers for the week.
Put black beans in bottom of crock-pot.
Place frozen chicken on top of beans.
Sprinkle with taco seasoning. (Use as much or as little as you want, according to your taste.)
Pour can of tomatoes with juice over chicken.
Cook 8-10 hours on low.
Shred chicken with forks and stir with beans and tomatoes.
Serve with rice and make into burritos, or make a chicken salad!
